Kitchen Adventures and Rainy Day Dramz

Hey everyone. Hope you’ve all been well over the past few days. I’m writing this from my bed, barely able to move. I’m so exhausted! And SO SORE! A little from shoveling and a little from wandering around aimlessly for hours. See what happened was I left super early this morning to run errands so I could bake this afternoon and get to the gym. Well. No. Didn’t happen. When I got out of the store and started up my car… my windshield wiper wouldn’t work. The very one I replaced two days ago. Wouldn’t move at all and it was POURING. I was a little panicked because I literally couldn’t see anything while driving but I managed to drive about a half mile or mile down the road to a gas station, where I proceeded to wait for hours for a new part. The gas station was right next to the mall so I climbed over snow mountains in pouring rain then wandered like a teenager cutting school. It was very surreal and by the end of the ordeal I was exhausted.

I don’t know about you guys, but I like to get in the kitchen after having a bad day. Even though I was exhausted, I still managed to make all three recipes I had wanted to make :) Check em out!

┬áThe first recipe I made was Alicia Silverstone’s Chocolate Peanut Butter Cups. I’ve made these before and they always come out great!

It is my friend’s birthday this week and these are his absolutely favorite treat. I first made them for him a few years ago and it has become a tradition. The recipe made 12 large cups and they fit perfectly in two layers in this cute little box.

There are a few other birthdays I’m celebrating in April and decided to gift these friends with some homemade cookies. I’ve been holding on to a recipe I wanted to try for a while and figured this would be the perfect time to test it out. I am so happy with the way these came out and I can’t wait to share the recipe later on this week!

Check out these beauties! They are my Gluten Free Almond Coconut Oatmeal cookies. They are light, crispy on the outside and chewy on the inside. I pulled out a secret weapon for this batch as well. Stay tuned to see what I used!!

The last recipe I tried was Laura’s Raw Snickers!!!! I knew the minute I saw these I HAD to try them before I embark on the Anti Candida Diet. These cuties are the naked candies, pre-chocolate dipped. My caramel was a little chunky since I don’t have an awesome high speed blender but I’m ok with some date chunks in my caramel ;)

The finished product. My bars aren’t as pretty as Laura’s but oh well. Not too bad I guess!

I cut one of the bars in half… you know, so you guys could see the inside ;) I tried a small half and it was so delicious!! They are decadent and definitely worth all of the effort. This treat will be a perfect send off into ACD land.

This will probably be the last sweet I have for a few months as I did a great job using up most of my sweeteners today (maple syrup, agave, dates, etc.). I just have a little bit of fruit to use up then I’m ready to start!! I’m excited about starting and hoping to see some improvement in how I’m feeling. I’m hoping to keep it up through the next couple of months, maybe until the spring? The plan in to be strict for at least three months then start reintroducing fruit slowly in the spring. Hopefully I’ll be able to tolerate fruit by the summer so I can enjoy my watermelon, cherries and berries (in moderation of course;)).

  1. Yikes, what a horrific start to your day! Scary that you had to drive like that, but I’m glad you got there okay. Wandering around in a mall sounds like hell to me.

    All of your goodies look absolutely freakin’ amazing! I’m really looking forward to your cookie recipe because almond + coconut in a cookie? That’s just a shit ton of awesomeness.

    Do those taste like Snickers? Even if they don’t, they sound really good.

    A great way to use up your sweeteners. Nothing like going out with a bang! :)

    • Yeah it sucked, the mall is a pretty horrific place. I didn’t even go into any stores, my skin was crawling.

      Thank you so much!! I’m not going to lie, the cookies are kind of amazeballs. I think it’s fun to make up some fun combinations and the texture was really interesting. I’ll share later this week!

      Honestly I don’t remember what snickers taste like! They are really delicious though. Very peanuty and yummy!

      Haha well luckily I am not going to be eating most of this stuff. The cookies and pb cups are being gifted and the snickers will be shared. I can’t really stomach a lot of rich foods lately which I guess can be a good thing.

  2. Rain after that huge snowstorm?! The east coast can’t seem to catch a break! Jeez! You are so brave for weathering the storm; I’m glad it ended with you getting a new wiper!

    I would like to eat everything in this post. One day I will make those PB Cups! Oatmeal cookies and almond joys. . .don’t get me started!! I need to pick up a dessert for Wednesday, and you might have inspired me!

    Good to have all the sugars out of arms reach – I know you’ll be successful with the Anti-Candida Diet!

    • Yeah the weather has been really ridiculous. Thanks, it was scary to drive but I made it :) It wasn’t the wiper that needed replacing, instead a far more expensive part that attaches the wiper to the car. Lol why wouldn’t that be the case?

  3. What a terrible start to your day! Ah well, at least you were able to salvage it and bake up a storm! So much deliciousness coming out of your kitchen! SO nice you making all those gifts- can’t wait to see what your secret was with those cookies ;) And those Raw Snickers- HOLY YUM!!! What a wonderful way to say goodbye to sugar for a while!

    • I definitely felt better once I got some podcasts going and got into my kitchen groove :) Thank you. I think homemade gifts are really special. Haha the secret ingredient adds a really lovely subtle flavor that makes a big difference. I agree! It’s the perfect send off!

    Sorry to hear about yr morning; the weather has been pretty crappy for sure. I had to trek to the doctor’s in the rain but at least I wasn’t stranded at the mall, blech! I hope besides the baking for others you also got in some warming and delicious food for yrself.

      Yikes, a trek to the Dr. in that weather must have been brutal. The mall was really horrible. I had a nice bowl of soup that warmed my soul after the ordeal ;)

  5. That sounds so scary! I’m surprised you were able to drive even a little bit. I probably would have curled into a ball and cried until the rain stopped. :( Sorry you had such a tough day.

    I agree that baking a bunch of yummy goodies is a fabulous way to make things all better. Those Snickers look insanely good!

    • Thanks Sage. The driving was pretty terrifying but I took it slow and put my hazards on. The one side worked so I was kind of leaning and looking out of that side lol I must have looked like an idiot.

      Definitely made me feel better, especially knowing that other people would be able to enjoy some treats :) That always makes me happy.

  6. Your Snickers bars look AMAZING! You did a superb job. I’m so glad they were worth the effort. I think you’ll agree that they’re not that difficult to make, they just require a lot of steps. Truly, though, yours look great.

    Those peanut butter cups look super yummy too!

  7. Shoveling is some intense exercise fo sho. Also those raw chocolate snicker things make me so happy, I think I’m in the mood for treats right now, ha ha. And yeah, restricting fruit will be tough, good luck with that!
