2012 Holiday Baking Extravaganza Part 2

Good evening friends :) How are you all doing today? I’m exhausted but doing well since I had some more successes in the kitchen. After my fails a little while ago it feels good to have everything come out ok. Especially since it is crunch time and I have to get these packages out soon!

Here’s what came out of the oven today:

Up first is another winning recipe from Vegan Cookies Take Over Your Cookie Jar! Oh man, aren’t they gorgeous?

These beauties are the Blueberry Spice Crumb Bars :) I wanted to add something fruity to the mix since I’ve been making a lot of chocolate and what a great choice! These would be great during the summer for a beautiful dessert featuring fresh berries (ooooh or cherries!!). I highly recommend this recipe!

Check out these Chocolate Chip Surprise Cookies!! What’s the surprise? Well, I subbed out half of the chocolate chips for crushed Candy Cane Joe Joe’s! Oh man, it’s very subtle but definitely adds a nice holiday flavor.

Aren’t they pretty? I used this chocolate chip cookie recipe and used 1/2 cup of chocolate chips and a 1/2 cup of crushed Candy Cane Joe Joe’s. It’s as easy as that!

There are actually two more treats that I made today that I have yet to photograph. Stay tuned for part 3 coming up tomorrow or Wednesday… whenever I can get back on here. There’s one more sweet recipe as well as the second recipe I’m trying from Practically Raw. It’s still in the dehydrator right now but I can’t wait!

Oh, as for the Dr. more of the same nothing. We are re-re-re-testing the results I’ve gotten in the past for inflammation and Vitamin D and whatever else was elevated (or deficient in the case of Vitamin D) to see where I stand. She also wants me to get a CT scan of my sinuses… a very isolated small part of a large problem but whatever, I guess I’ll see what happens after the blood results. When they call with the results I’m going to ask about the possibility of Celiac disease again. I’ve read you can still have it even with negative blood work so I’m going to see if that is still something we should explore considering nothing else is really panning out.

  1. More deliciousness! Both of these look fantastic. I especially love how you subbed half of the chips for Joe Joe’s. What a great holiday twist!

    Bummer that you have to get tests redone again. It’s all so frustrating, isn’t it? I really hope that they can get you a solid answer soon. How have you been feeling?

    • Thanks Molly! I try to do some little things to create a little twist from the norm. I also had lots of Joe Joe’s to use up ;)

      It’s incredibly frustrating. I’ve been feeling pretty much the same with a few good days and a few bad days. I’ve been really exhausted after baking all day and last week I felt a ton of fatigue… almost a bit of a setback. It’s been pretty frustrating but I guess I just have to have faith that there’s an answer around the corner.

  2. A very productive day all the way around! Oh my goodness, a re re retest sounds exhausting, but hopefully they are willing to check one last time for Celiac’s disease. I’ve heard about false readings before. Wouldn’t it be nice to have some answers for the New Year?!

    Look at all of these beautiful treats! Blueberry Spice Bars – OMG. I love peppermint and chocolate, but those spice bars are really speaking to me. Ha! Looking forward to the other treats, and the Practically Raw recipe!

    • Yeah, it was definitely productive :) Yeah I feel like the reason I don’t have answers is because they just run the same stupid tests over and over. It’s incredibly frustrating and I’m thinking that I’m going to have to find a new rheumatologist if she doesn’t come up with anything (at least an idea or what it could be or something… anything at this point). It would be nice but my next appointment isn’t until after unfortunately :(

      Honestly, I think I’m in agreement, the blueberry bars kind of stole the show for me! I definitely recommend them! I’ll be unplugging that dehydrator soon ;)

  3. Sarah, everything looks incredible! I’m with you–it’s so easy to make chocolate-y things that it’s nice to get non-chocolate-y things in the mix ;) I think cherry crumb bars would be awesome too (although I do love blueberry)! Did you use oat flour? Do you sub it out with just a 1:1 ratio?

    I’m so frustrated for you and your lack of results : / I hope you find some answers soon! In the meantime, enjoy your relaxation ;)

    • Thanks Laura! I know, I feel like I add chocolate to everything… it’s just so good! The crumb bars were great, it will be fun to experiment with! I did not use oat flour for this one but will the next time I make it. I usually just sub it out 1:1.

  4. Wow, those blueberry crumb bars look so good! How have I skipped over those in the past? Great job.
    Bummer about the doctors tests…it’s nice to have someone walk you through every single possibility but never finding answers is really frustrating. I hope it’s not too much stress, especially since this is such a crazy season. Hope you guys figure out what to do.

  5. You have been busy, busy, busy in your kitchen!!!! I am dancing on my tippy-toes knowing that I will get to sample your baking talents soon! I hope that you and your doctor can sort out what has been troubling you. Health issues are so frustrating. I am keeping my fingers crossed for you.

  6. Those blueberry spice crumb bars look amazing! Have you made a lot of recipes from that book? Mike’s baking tonight for his homeroom class tomorrow, but he’s all edgy about it because apparently he always fails at baking?! I wouldn’t know, he’s never baked around me, ha ha. :) But if you’ve got any solid recipe recommends, that would be awesome! He’s thinking something chocolate. :) And I love the idea of candy cane/chocolate chip cookies!

    • They are sooooo good! I have made quite a few of the recipes and they are all really great. Awww I’m sure whatever he bakes will be great! I love the mexican hot chocolate cookies! They are amazing!!

  7. I’m impressed with how well you’re taking the doctor’s…um…non-results? I’m sure you’re immensely frustrated. I wish they could give you a more definitive answer. My biggest wish for you is better health in 2013.

    • Oh I’m annoyed for sure. It’s really frustrating and to make it worse the girl who took my blood must have hit a nerve because my arm was KILLING ME yesterday.
