2012 Holiday Baking Extravaganza Part 1

Hey guys! Hope you are all enjoying your Sunday. I woke up today and stayed in bed for a while and that felt GREAT. It was nice to be able to relax this morning, especially because I knew I’d be doing a lot of baking today. I can’t believe how quickly Christmas has crept up this year. I’m hoping to do all of my baking between today and tomorrow, so far I’m doing pretty well!

Let’s check out what came out of my kitchen today :)

Gingerbread Biscotti from Vegan Cookies Take Over Your Cookie Jar!! Aren’t the pretty?!!

They came out absolutely amazing! I left out the crystalized ginger because I don’t like super overwhelming ginger flavor but these were subtle but still spicy. Such a great recipe!

Peppermint Cookie’s n Cream Bark! I packed up this box for my friend who LOVES this stuff. It’s always a hit so it’s a great choice and it comes together really quick. All you do is melt some vegan chocolate at mix in some crushed Candy Cane Joe Joe’s, spread on a cookie sheet and place in the fridge to harden. So quick and easy!

Finally, I made these Chocolate Pumpkin Loaves from the PPK! I’ve been wanting to make this recipe for a long time and I’m so glad I did!

I mixed up one recipe’s worth of batter and split it between a few mini loaf pans. It made 3 regular sized ones and one runt ;)

Obviously I couldn’t give these away without trying them first! ;) I cut off a small piece of the runt loaf and tried it and it was delicious! Oh and I forgot to say I made them gluten free by using oat flour instead of all-purpose flour and the taste and texture were still great! Definitely a great recipe!

So that’s what I made today :) I have another day of baking planned for tomorrow after my appointment with the Dr. I also will be making another recipe from Amber’s book! Lots of great stuff happening so hopefully I’ll be able to post a little more than I have been. For now, I’m going to relax in bed and listen to some podcasts and drink some tea.

  1. Sarah, I am constantly in awe of your baking abilities! The biscotti is absolutely perfect, like it was done in a professional bakery! I do love ginger, but I think I’d do the same thing by leaving out the crystallized ginger. I bet your friend will be so excited to have the beautiful box of peppermint bark! Hopefully by next year at this time, the Denver Trader Joe’s will be up and running, and I’ll try some Candy Cane Joe Joe’s for myself! Beautiful chocolate pumpkin loaves – I hope you keep the runt for yourself. :)

    I sure hope they are finished testing you for everything under the sun, and can pinpoint something specific. You deserve some answers! I’ll be thinking of you.

    • Aww thank you Ingrid. I can’t take all of the credit for it as I’m typically using other people’s recipes! I’ve never had crystallized ginger but I was just nervous it may be overpowering. That would be so great if you get your Trader Joe’s! I look forward to reading about your first trip there :) Oh that runt is mine ha! I’m probably going to freeze the rest of it for dessert when we celebrate Christmas (for my niece and sister in law).

      Thanks! I just started listening to the Impractical Jokers podcasts and just like the show I can’t stop laughing! I put them on while I was baking and just continued to listen to them. They are hilarious and smart and a little raunchy and mean to each other and it cracks me up every time :)

  2. Oh, man!! I shouldn’t have looked at this post because now I’m having a serious sweets craving. You did some fantastic baking! The bark looks especially divine. Everything looks like it should be in a professional bakery. Yum!!

    • Lol awww. I have a savory snack planned for today along with the rest of my baking. It’s funny because looking at all of this is making me crave sweets less which I guess is a very good thing, ha! Thanks, the bark is always a big hit! I should take that as a sign because it is so quick and easy to make but I love baking the day away around the holidays. Thank you :)

  3. Mmm, biscotti…. I haven’t started Christmas baking yet, but my mom has, which kind of makes up for it. Yesterday she loaded Mike and I up with a big container of 7 different types of treats…I’m a spoiled vegan. :) Glad you got a few successes under your belt, and I adore the chocolate/pumpkin combo…so good. Tea/sleeping in/podcasts sounds like my kind of Sunday morning. :)

    • These gingerbread biscotti are really delicious! Aww, how sweet of your mom! It’s nice to see that I’m not the only one that goes crazy in the kitchen around the holidays ;) The successes feel great, that’s for sure! Haha yes, it was definitely a perfect sunday!

    • Thanks Laura! Haha I know you know how that feels! Such a feeling of relief now that I’m done! I don’t give out things I bake if I’ve never tasted them :) Definitely time to back off though, ha!

      • Me either! Plus sampling is the best part!!! …Especially because the sample is usually still warm (if you’re anything like me and taste test before it has cooled entirely!!)

        I hear ya about backing off–I’ve been having MORE than my share of holiday goodies.
