WIAW – Liquid Wednesday

Hey everyone! Happy hump day! Hope the middle of the week finds you all well. I decided to do a What I Ate Drank Wednesday post today. I’ve been feeling yucky since yesterday and decided maybe I’d just drink my meals today to see how that works. I’d be able to sip throughout the day and I’d mix it up between juices and smoothies (with protein powders to bulk up the calorie count!) and see how I felt.

Before I get into my beverages for the day, I just wanted to show you two pics from yesterday:

Check out how gorgeous this breakfast is! I had a piece of my Cinnamon Oat Bread with raw pecan butter, strawberry and banana. I sprinkled the top with a little coconut and ate the rest of the banana on the side. It was pretty to look at, delicious to eat and filling in my belly. Perfect meal.

I just wanted to show you the cupcakes all dressed up and packed up to go. I was really happy with how these came out. :)

And on with the liquids!

Lots of green juice!

A cherry chocolate smoothie for breakfast. Seriously my favorite smoothie.

Some unpictured kombucha (not the one I got carded for ha!) is going to be consumed at work.

I’ll be having a Carrot Cake Smoothie for dinner tonight. This one is the bulkiest one of the day as it has oats, walnuts, raisins, carrots and vanilla protein powder. This one will fill me up for the night :)

I will definitely let you know how I felt after this experiment! It’s definitely not like a juice cleanse because there is plenty of bulk in the smoothie but I’m hoping sipping sits better with me than chewing ;)

Hope the day finds you all well! Have a great night and I’ll be back soon with some actual food that I chew ;)

Productive Monday!

Hey guys! Well, as I said yesterday, my goal today was to be as productive as possible and try and do some cooking for the week. I’m really happy that I accomplished everything I wanted to and I have some fun stuff to show you :)

I energized myself by making a really delicious green juice. Today’s juice had lots of romaine, a large cucumber, 2 stalks of celery, granny smith apple and the juice of 1/2 of a very juicy lemon. It was the best one yet!

First up I made the Hummus for Bagels from Veganomicon. I used to make this all the time before I was gluten free and it is amazing. Isa basically tweaked her hummus recipe to create a thicker spread, perfect for bagels or english muffins (my former preferred hummus carrier). It was a few hours after my juice and I was getting hungry so I figured it would be a perfect late morning snack.

This was my favorite way to eat this hummus. A healthy schmear (yeah I said it) topped with some fresh basil and sun dried tomatoes. I used to eat it mostly on Ezekiel English Muffins or I’d make a sandwich on a scooped out, toasted everything bagel. Nowadays I use gluten free toast and it is just as good :) Definitely give this a try!

After the hummus I finally made this Cinnamon Quinoa Oat Bread, which is basically a lightly sweetened gluten free flatbread. I saw it on Laura’s blog and thought it sounded amazing so I finally made my own. I didn’t have quinoa flour so I just used all oat flour and made my own almond meal since I didn’t have that either (those were the two ingredients I forgot from Whole Foods, oops!). This worked out perfectly though. The flatbread is chewy and dense and lightly sweet with a perfect hint of cinnamon. This is one of my favorite things I’ve tried in a long time. I only tried a little sliver but it was damn good (especially because it was still warm!). Can’t wait to try it with toppings!

After the flatbread I blended up some raw caesar dressing to enjoy with some kale. Didn’t feel the need to take a pic though… I’d rather show you tons of pics of this:

My boss’ birthday is today so we are going to have a little celebration at work tomorrow and as the baker of the bunch I made the birthday treat.

I used the basic chocolate cupcake recipe in Vegan Cupcakes Take Over the World along with the vanilla buttercream recipe burned into my memory. There is something special about these cupcakes though ;)

Here is one cupcake garnished with a hint of a sweet surprise hidden inside ;)

Check out the beautiful fresh strawberry filling. I just chopped up some fresh strawberries, mixed it with some of the buttercream and piped it in the middle. My co-worker suggested some sort of fresh fruit incorporated into the dessert when I asked for suggestions and this is what I came up with. Hopefully he’ll like it :)

That’s all for today. I’m completely exhausted so I’m going to take some time to rest up :) It has been a cold, grey, yucky day… perfect for curling up with some tea and a crappy movie :)

Hope you all had a great Monday and enjoy your evening!

Random Fun

Hey guys! Hope you all have had a great weekend so far. Sundays have always been my favorite day of the week and I love it even more now. I feel like Sunday has a very special vibe… a little lazy, a little productive, usually means family time… I just feel like it’s special. The only way to ┬ámake that better? The fact that Sunday is also my Saturday and I get another day off tomorrow. Love it.

I’m going to be doing a ton of work in the kitchen tomorrow so I’ll have lots of food to show you. Today, I just have some fun Instagram pics to show you.

Working in the studio can sometimes be tedious and monotonous because I’m spending 8 hours a day staring at a computer screen editing pictures. Sometimes we take little breaks and look at funny videos on Youtube or fun pages on Facebook to save our sanity and break up the monotony. The other day we were looking at a FB page (can’t remember the name) and they had tons of funny memes. We saw this one and I totally lost it because this is SO me. I appear calm on the outside and I am pretty good at keeping my emotions in check but I’m human and I get frustrated and angry and this is EXACTLY what I’m thinking at those times. It actually happened today… I was parked on the street and someone parked in front of me then behind me leaving one inch of space on either side for me to get out. I was livid because I hate driving to begin with and that situation is like a nightmare for me. The jerk was in the process of parking behind me when I got to my car so I don’t understand why he didn’t let me pull out so he’d have room to park but whatever. I kept calm and Austin Powers’d my way out of that stupid spot.

I got this shirt for myself today ($3!!). It says “I’ve Got Mad Ninja Skills” lol! Oh man I love it, can’t wait to wear it to the gym.

Yesterday as I was driving home from work I saw this gorgeous HUGE full moon. I was at a stop sign so I snapped a pic and I thought it looked really cool and I love the flare that the lights have.

Here’s another one that I thought came out cool. Yes, I was stopped while snapping, I don’t take pics and drive :)

This is the other pic of the grain free granola I made the other day that wouldn’t upload. I haven’t even had a chance to eat it yet, I’ll have to change that this week!

That’s all for today! I’m definitely planning on doing some major relaxation today since I plan on busting out a lot in the kitchen tomorrow. I’m also happy to say that planning is going well for the podcast and we have our first episode on track! We just need to record it and hopefully that will happen within the next few weeks. I need to get a microphone first :X I will definitely keep you posted!!

Have a great Sunday!

Thursday January 24, 2013

Hey guys. Check it out, 2 days in a row, ha! I just got settled in after a quick cardio session after work. Today’s post is going to be quick as I have to go make dinner. Then I’m going to watch yesterday’s UFC press conference (Georges St. Pierre vs. Nick Diaz, HOLY SHIT!!!) and tonight is also a new episode of Impractical Jokers. Good night all around!

I actually managed to capture all of my meals until now. It’s funny because I mentioned in my last post about how it’s too damn cold to drink smoothies and eat raw/cold food… then I made a smoothie and ate cold food all day, ha!

I was craving a cherry chocolate smoothie and it was warm in the house this morning so I made it. Just as great as I remember!

Yummy orange as a midmorning snack.

Hummus, lettuce, carrot and sun dried tomato on a gluten free tortilla for lunch.

Pre workout Larabar.

I think I’m going to roast up a sweet potato and some brussels sprouts for dinner. Yum!!

Sorry so short! I’ll be back at some point over the weekend to catch up. Have a great night!

Catching Up!

Hey everyone! I think this is going to end up being a long post so there is fair warning up front ;) It’s been a few days since I’ve been on so I figured I’d just play a little catch up today.

First, Monday marked the last day of the Crazy Sexy Diet Cleanse. I didn’t do a great job of keeping you all up to speed with my progress but I think it went pretty well! I didn’t have as much success as the last time I tried it, and I think it’s because I had to flood my body with tons of disgusting shit for that stupid CT scan. I do plan on continuing to eat this clean, alkaline diet. The only thing that has been difficult is the morning drink since it’s SO COLD now! I may start my day with a warmer meal but still enjoy a juice or a smoothie later in the day. Anyway, I still recommend the cleanse, it’s always a great experience for me!

On Monday I went to a new specialist, a hematologist. My last round of blood testing at the rheumatologist showed an elevation in white blood cells so she recommended I see the hematologist. OMG what a nightmare! First, there was a woman hacking and coughing all over the waiting room and ended up eventually sitting next to me. I’ve never used so much sanitizer in a short period of time in my life. I was wishing for a bubble to sit in. Anyway, after waiting an hour and 15 minutes I finally got in and waited another 20 minutes for the dr. I had blood taken and waited another 15 minutes for the results… which were NORMAL. So while I’m obviously glad the results were fine, it was ridiculous that I was so stressed about it and wasted another few hours of my life. The hematologist also believes that it is still an autoimmune situation… I have my next appointment with the rheumatologist in 2 weeks.

OK now onto some fun stuff! Let’s check out some pics from the past few days!

This pic is for Shen! I found Eddie in his favorite spot multiple times during my stay there and snapped this fun pic of him :)

Some veggie soup I ate yesterday to deal with the frigid weather. I sit in the meeting point of two major drafts in the studio so I’m cold ALL THE TIME so warming meals like this are so necessary during the cold weather.

I went to Whole Foods today and picked up mostly the same stuff as always, but also decided to pick up some kombucha. I saw the Third Eye Chai flavor and HAD to try it and figured I’d give the mango a try as well. I got carded to buy the chai flavor. Is this stuff actually boozy or is it just over some borderline amount and they have to? Seems kind of silly.

Also picked up some Mochi! I’ve had it before and liked it so I thought it would be fun to experiment with it. I have some plans ;)

After I got home from Whole Foods (and realized I forgot to buy the only two things on my grocery list, wah!) I decided to make a batch of oat free granola inspired by Laura.

I have other pics of it that won’t upload right now for some reason. My internet connection is so horrendous at home. Anyway, it came out pretty good but didn’t clump together that well. I used almonds, walnuts, coconut, hemp seeds, raisins, dates, coconut, coconut extract and cinnamon. Laura, do you have a recipe for yours? It was SOOOOOO good!

So finally, the big announcement!! A friend of mine has agreed to be my podcast co-host!! Her name is Vanessa and she is AWESOME. We call ourselves Team Chaos because it is always disaster when we are together… which is why we are a perfect podcasting pair :) We don’t have an expected date for our first episode just yet because we are still working on logistics but we are SO EXCITED.

Our first episode will be a getting to know you kind of deal so I thought it would be fun to ask all of you what you think would be fun to hear on that first episode? Any funny icebreaker questions you remember from back in college or some stupid workshop that you had to participate in? Any questions for us just out of curiosity? Please feel free to comment with any questions (the more the merrier!) or you can tweet us @TeamXChaos.

I absolutely can’t wait to get started on this fun project! It is going to be just us shooting the shit on random topics. We hope to make you laugh, we may vent a little bit and it’s going to be fun for us to just get together and chat.

That’s all for this giant post! I hope you are all having a good hump day! Have a great day/evening!

My Crew

Hey everyone. Still no appetite but I thought I’d share some pics of the crew I’ve been cuddling with all week :) Love these guys!

This is Eddie being all handsome.

Getting some Vitamin D.

Jack is the most elusive of the group… she doesn’t come out much but I saw her just relaxing on the chair and grabbed this shot!

Sweet Tyler, hasn’t left my side since I got here.

Profile. Love his face <3

That’s all for today! New specialist tomorrow so I’m sure that will be fun. Also, I FINALLY received my CT scan results and they were all clear as I expected. Good news obviously but I just wish I didn’t have to go through all of that. Oh well.

Hope you are all enjoying your Sunday! I’ve been lounging in bed with Tyler all day. I’m watching The Help right now. Gonna get back to it!

Fun Friday: About Me Page Update

Hey everyone! I’m home sick today (this morning was not pretty) and I figured that I’d catch up on some blogs while I was laid up. I visited Sage’s lovely page and saw her post 26 Random Facts about herself as well as an update to her About Me page and took it as inspiration for a post for today!

I updated my About Me page with 30 random facts about myself. Some were the same as before and I added some that will hopefully be new info for you guys. I hope that it helps you get a little more insight about who I am as a person outside of this blog :)

Have a great night!

Empty Promises

Hey guys. So I guess I should stop making promises I can’t fulfill huh? It was my full intention to get back to regular posting this week but then life got in the way. My co-worker was sick on Tuesday and no one bothered to tell me so I could come in later than usual so I ended up working 9 am until 8 pm. I was exhausted and still went to the gym like a champ. And as of yesterday I’ve been at my brother’s house so it’s always a little more difficult to post when I’m displaced. I’m going to bring the rest of my food tomorrow so hopefully I’ll be able to post on Saturday.

I’m still doing the cleanse and enjoying it. The CT Scan kind of messed up my system so I feel like I’m detoxing again but it’s a good thing.

Not too many pics to share. Been eating a lot of these:

Big salads and greens. Green drinks although I’m going to have to put the juicing on hold while I’m here. They have a magic bullet so I’m going to attempt a smoothie in that. Hopefully it works!

This is the sad face I have to look at every time I leave the house. He makes me so sad every time I leave. Love this guy. He is cuddled up with me as I type this :)

I’m not going to make any promises about posting since every time I intend to life seems to get in the way. I have my first training session since I took this break tomorrow so hopefully that’ll go well!

That’s all for tonight. I’m all settled in ready to watch Impractical Jokers :) Have a great night!

CT Scan and Some Surprises!

Hey everyone! Hope that your Monday has gone well. I had my CT scan done today. The test itself was quick and painless but the lead up was really gross and tedious. Should get results soon, don’t expect too much to come out of it. Otherwise, I just relaxed for the rest of the day because I felt pretty tired and yucky from the crap that’s in my body now. I’ve been remaining pretty positive though and did my best to make lemonade out of lemons.

So here is my breakfast of champions. It was absolutely disgusting and I was nauseous for most of the day from it. I decided to make my breakfast a “CT Scan Party” and chugged down my contrast whilst listening to the song “Radioactive” by Imagine Dragons. It made me laugh so it made choking that crap down slightly more bearable.

Since I drank that crap I’ve been feeling absolutely disgusting and have been trying to drink tons of water to flush it out. My tummy is still unsettled so I’ll probably have a smoothie or some gluten free toast for dinner.

On a happier note, I’m so lucky to have met such amazing, thoughtful friends through this blog. I’ve received two sweet gifts in the mail over the past few days.

Check out the goodies that Amy sent me!! She works for Herbivore Clothing and sent me a sweet little package with tons of adorable (I can’t even deal with the I’m Vegan and I <3 You sticker… and the Only Kale Can Save You Now!) stickers, some buttons and a great lip balm! Thank you so much Amy!! I’m so glad you liked your treats!

I also received this tasty treat in the mail today! Laura has always been so generous in sharing her treats with me and I am SO EXCITED about this one! When I saw her Oat Free Granola I immediately knew I wanted to try it. Imagine my joy when I opened the package and saw this serving of this gorgeous granola! I couldn’t wait so I ate a piece of it and holy wow guys. It is DELICIOUS!! I’m saving the rest to bring to work with me for a snack before the gym tomorrow. Hopefully I’ll be able to keep my hands off til them ;) Thanks so much Laura, you are always so thoughtful!

That’s about it for tonight. I have some great meals planned for tomorrow so I’ll definitely be posting. Lots of greens and superfoods to get this crap out of my system :) Just going to relax tonight. Have a great night my friends!

CSD Cleanse: Day 13

Hey guys! I know I haven’t been around much but I’ve just been really busy with cleansing and working and whatnot. I started a regular cardio routine as well and it feels good to at least get moving again. I’m also going to do my first training session on Friday too! I’m only going back once a week for now and I’m not doing boxing yet since my shoulder is still jacked… but it’ll be really great for me emotionally so I’m really excited!

Tomorrow is my CT scan. I’ll be enjoying a breakfast of champions of 2 bottles of contrast followed by an IV drip dessert. Awesome. I see a lot of green juices and smoothies in my future to flush that crap out of me. I hope to feel ok enough to get some cardio in tomorrow evening.

My cleanse has been going well but I haven’t been eating anything crazy. Here are the meals I enjoyed today. There was also an unpictured green juice.

Morning glory waffle with too much maple syrup. It came out so quick. It was still delicious though :)

This is a pic I too earlier in the week but lunch was the same meal so I am using this one. Two zucchini cakes with a big ol’ carrot and some roasted cauliflower.

My brother, sister in law and niece are going to Texas to visit her family next week so we went over to their house for dinner tonight to see them before they go. I had a delicious dinner of roasted veggies and cucumber salad. It was really great.

Snacks in between included raw almonds and a green juice.

That’s all that’s happening now. Lots going on but I’m definitely trying to keep a positive, optimistic attitude :) I hope you are all doing well! I’m going to try my best to post a few more times next week.

Have a great night!
