My Orlando Vacation!

Hey everyone! I’m back from Orlando! My vacation went so fast but I had a great time! Lots of time with my best friend, great warm weather and of course, yummy vegan food! I took lots of pictures of my delicious meals and couldn’t wait to share them with you!

I arrived there Wednesday evening and my friend’s birthday was Thursday! I decided to cook him a nice birthday brunch. I had such a great time doing it and it came out amazing!

As soon as I saw Allysia’s Pumpkin Coffee Cake recipe I knew I had to make it. It sounded delicious and looked like it would come together quickly and it was such a great choice! You guys have to try this recipe, it is AMAZING!! Perfect way to welcome the fall!

This was my brunch plate with all of the final dishes :) While the cake was cooling I threw together a quick tofu scramble and had bought some fruit for the side. It was such a delicious and perfect brunch! A little sweet, a little savory and the burst of fresh fruit. So amazing.

We spent a lot of time sitting in his back patio space and almost every time we went out there there were lizards crawling around on the screen. I thought they were so cute so I took this pic! I love the way it looks with the instagram effect :)

The following day we went to The Loving Hut for lunch. We are a little dense apparently because we didn’t realize they close from 3-5 and arrived a little before 4. The woman let us in anyway and still fed us! It was like a private seating and it was so sweet of them to serve us even though they were closed. I started off my meal with a delicious bowl of wonton soup. The broth was light and lovely and the wontons were super tender and delicious.

For my meal I ordered the Combo #1 which consists of golden rice (amazing), some tofu, a really delicious simple salad and a summer roll. It was absolutely delicious.

That night we decided to stay in and have a mellow movie night so decided to load up on some goodies. We got 2 bottles of Electra Moscato and some treats from Raphsodic Bakery. The bakery is literally my vision I’ve always had for a bakery come to life so I was teetering between jealous (lol!) and so stoked that it exists and seems to be thriving. Anyway, back to the treats! In the box you’ll find a chocolate chip “sammie,” (a cookie sandwich with frosting in the middle), a chocolate espresso cupcake, a chai cookie sammie and a lavender brownie. I ate the chai cookie sammie and it was amazing! I now understand Shen’s ability to eat half at a time because I think these treats are even richer than they look so it was eating in halves :)

Yesterday (Saturday) we checked out the amazing Farmer’s Market! I didn’t get pics and didn’t buy anything since I was leaving so soon but it was so great! It was huge and had gorgeous produce. There was one vendor selling amazing fresh pineapple and you could smell it from so far away! Yum!

A friend of my friend was hanging out with us and decided to bring his kitty over for me to meet! Her name is Hannah and she is so adorable! I passed by her just hanging out at the top of the stairs and decided to take a pic of her sweet face :)

This morning we went to brunch at Ethos Vegan Kitchen. They moved to a new location since the last time I was there and I love the new space! It is big and spacious and has a great vibe and decor. It definitely seems to be thriving! I decided to have the breakfast burrito because it just sounded so delicious! It was tofu scramble with sausage and potatoes wrapped in a tortilla and smothered in sausage gravy. It was super savory and delicious and obviously really filling!

I obviously didn’t photograph everything I ate but these were definitely the highlights! I decided that I would just enjoy myself and sure I had a few rich meals but my messed up digestive system kept me in check with nausea and a few headaches. Ha! Anyway, it was an absolutely amazing time and I’m sad it went so quickly!

Tomorrow is the beginning of Vegan MoFo! I feel like it snuck up on me! I’ll be back tomorrow with an introductory post and then I’ll be ready to dive into my theme of recreating restaurant meals! I’m so excited for this project!

4th Annual RWT Care Package Swap

Hey everyone! First of all, thank you all so much for the birthday wishes! You are all so sweet and kind and I really appreciated all of the well wishes :) I had a really amazing day and I am very fortunate to have a really amazing family that helped me celebrate and feel special. I’m also really blessed to know all of you. One of my biggest goals with blogging was to get to know really amazing people that share common interests and I feel like I’ve accomplished that goal and I feel really lucky to have been welcomed into this community, so thank you all!

I mentioned a few weeks ago that I signed up for Lindsay at Running With Tongs’ Fourth Annual RWT Care Package Swap. I was paired with Brigid over at Vegging Out. It was such a great surprise and great timing on her part (although I’m not sure if she knew ha!) because I got her package the day before my birthday! It was so fun to get it and it kind of felt like an extension of my birthday ;)

Brigid included a cute little card and a recipe for a super yummy sounding dill dressing! I have to say it’s pretty brilliant to include the recipe and I may have to steal that idea in the future :X So cute and the recipe sounds great!

Included in my package was organic ginger aid tea (that will definitely help with my nausea and digestion!), some garbanzo bean flour (Soccas anyone?!), plantain chips (LOVE these), Justin’s chocolate hazelnut butter (YES!!!!) and some stone ground mustard. I’d be lying if I said I haven’t already dug into the plantain chips. I love these things, they have a hint of salt and are savory and delicious. I can’t wait to try the chocolate hazelnut butter too, it sounds delicious!

I had such a great time putting together Brigid’s package, when she posts about it I’ll make sure to link you to it :) These swaps are so fun! Thank you so much for the treats Brigid!!

So it has been a few days since I’ve posted and I have a few things that I’ve collected to show you so here are some miscellaneous things from the past few days :)

I was able to see my friend from Massachusetts the other night and as I mentioned we celebrated both of our birthdays :) We were born exactly two weeks apart which is so fun. And another fun fact, my best friend that I’m visiting in Florida was born exactly 5 days after me so I’ll be with him to celebrate his birthday! Yay! Anyway, I decided to make her cupcakes and figured some classic chocolate cupcakes with vanilla frosting (both recipes from Vegan Cupcakes Take Over The World) and rainbow sprinkles would be a good call :) Here they are all packed up and ready to go!

I had to show you this because I thought that they were so cute and amazing and so absolutely perfect for me. A friend of mine gave me this wall hanging that says “Do Something Amazing Every Day” and a really cute “Fight Like A Girl” tumbler. I love the art because it resembles something I pinned on Pinterest (you can see it here) and I am putting it directly across from my bed so it is the first thing I see every day when I wake up. And the tumbler is just so perfect! :) I’m sipping from it right now actually!

In case you didn’t think I was already a spoiled brat, I wanted to show you this stuff too because again, it is so indicative of my style and who I am as a person. My friend from Massachusetts gave me this adorable and thoughtful gift including a super cute mug and mug cozy (aaaahhhh so awesome!!), some delicious smelling vegan pumpkin spice soap, a gorgeous owl necklace and she packed it all up in the super cute skull and crossbones tote! That is definitely going to be my new farmer’s market bag! Thanks M!!

So I guess that’s everything exciting from the past few days! I hope that you all had a great weekend and that your Monday went well! Two more work days until Florida! Yay!!

Hey friends! Thank you all so much for your early birthday wishes, it was definitely very sweet of you all! I feel very lucky to have “met” all of you :)

Today I officially turned 29. And for the first time in a long time I decided to spend my day exactly the way I wanted to spend it. I started off with a very early trip to the gym where I warmed up with some cardio then decided to play with the new boxing equipment that my gym has! I forgot to tell you all that on Thursday I had my first full fight training session in months and it felt great and was so much fun! In addition to the heavy bag we have, they added a return bag, a speed back and a slip bag. I had SO MUCH FUN testing everything out and doing round after round. I was tired after and now I’m sore but it’s so worth it! It reminded me how much I love it and how much I missed it. So this morning I decided I’d do a little bit of training on my own and I’m glad I did :)

After the gym I headed over to Starbucks to cash in on my free drink. You better believe I took advantage of that, ha! Here is my Venti Iced Decaf Vanilla Soy Latte. I guess it’s becoming more clear to me that I’m pretty high maintenance when it comes to food :X

So I decided to go to a Mexican restaurant for my late birthday lunch mainly because I wanted to imbibe a giant margarita. I didn’t realize it was a late lunch/early dinner (we ate at like 4?) so it turns out I was doing a little day drinking. Oops, haha! So anyway, back to the masterpiece above. That, my friends, is a Black Cherry Margarita. And that Black Cherry Margarita was DELICIOUS. I should have known better that it would be so filling and I should have ordered lunch accordingly but I wasn’t thinking clearly and ordered…

This delicious burrito! I tore through the tortilla and just ate about 3/4 of the the insides. It was called the “Healthy Burrito” and included “broccoli, cauliflower, eggplant, zucchini, portobello mushrooms and sweet peppers steamed with enchilada sauce, then overstuffed with black beans and served with a side of sour cream and guacamole.” I switched out the sweet peppers for onions and obviously skipped the sour cream. It was so good but I was SO STUFFED when I walked out of the door. And drunk. I have very low tolerance lol.

My intention was to go to Babycakes to get my birthday treat but apparently it is closed on Saturdays! What?! I recovered though and decided to pass by the Whole Earth Bakery and picked up a few treats. I picked up a slice of Pumpkin Pie (Happy First Day of Fall!), a slice of Key Lime Cheesecake, and…

Chocolate. Almond. Cheesecake. Clearly this would be the ultimate birthday dessert so when my poor belly recovered from lunch I ate about half of this bad boy. It was really rich and decadent but also really delicious!

So here I am, a little sleepy, a lot full and very happy. I had a great day and I’m so thankful to my family for making the day special :) I hope you all enjoyed your Saturday and the first day of fall! Tomorrow is back to the grind with another wedding, but I only have 4 more days of work until my trip to Florida! Yay!

Fun Friday: It’s Here!!

Hey everyone!! Happy ALMOST Fall! We are one day away my friends! And one day away from fall also means one day away from my birthday! I love that  my birthday is the first day of fall :) It makes me smile that much more!

Today is my last installment of the Countdown to fall. It’s just a mish mosh of fun fall things that are starting to pop up and some things that may pop up later this fall ;)

As I mentioned, tomorrow is my birthday! I received this postcard from Starbucks entitling me to a free birthday drink! Woo!! Too bad the pumpkin spice latte isn’t vegan. Wah!

Pumpkins at the store!! It made me smile immediately to see them! I wish I would have taken a photo at the farmer’s market. There were tons of pumpkins and beautiful fall colored flowers.

I haven’t made these in probably about 2 years but I definitely need to make them again! They are Pumpkin Pecan Muffins. I used the Pumpkin Pecan Banana bread recipe from The Skinny Bitch Ultimate Everyday Cookbook and just made them into muffins. They were amazing, definitely something I need to make this year. They are also the subject of one of my favorite food photos I’ve ever taken. I don’t know why, I just love this pic.

Vegan MoFo is coming my friends!! Another wonderful thing about the fall is how the vegan blogger community comes together for Vegan MoFo. I participated last year and accomplished the task of 31 posts in the month of October (I actually posted every day). It was a bit daunting and overwhelming but I did it and I was happy I did! I’m extra excited this year because I actually thought of a theme that I’m pretty stoked about! I decided that this year I will take menu items from restaurants and will recreate them at home! The choices will range from dishes I’ve tried and loved, dishes I’ve wanted to try but need to veganize in order to do so, or dishes from restaurants I’ve never been to but want to try! They will be pretty simple dishes ranging from smoothies, to salads, to entrees to desserts. The restaurants will be a mix of chains, local restaurants and vegan restaurants. I have started brainstorming which dishes I want to veganize or recreate and have about 16 already :)

What dishes would you like to see me recreate off of a restaurant menu? I could definitely use some suggestions, and please include a link to the menu if you’d like to suggest something!

Sorry for the shortish post, I’m a bit tired so I want to rest before I see my friend tonight! My friend that lives in Massachusetts (who just got married) is coming down to hang out and I’m so excited!

Oh as a bit of an update, I got my blood test results back and will require further testing. A few of my antibody levels came back a little elevated so I’ll have to investigate more. I was already planning on following up with one doctor but given the test results I feel like I should follow up with a rheumatologist but I’m waiting to speak to my doctor. As you can tell I am a researcher and I will look for as much info as possible on my own so while the first discussion never involved a rheumatologist I think that is the best way to go. Hopefully she agrees!

So there’s the update and some more fun fall things! Happy first day of fall tomorrow and I should be back tomorrow evening to share my birthday festivities with you ;) Be warned, I may be a little tipsy while posting, ha!

Some Food and Something Sweet

Hey everyone! I finally decided to stop being a lazy ass and photograph some of my food. Nothing new or outstanding to report, just getting ready to head out for my long day at work. I’m pretty tired so I have a feeling it will feel even longer but I’ll power through :)

Check out some of today’s grub.

Breakfast was the last of my Van’s Gluten Free Waffles with banana and maple syrup. I got through most of it which was pretty good. I should have stuck with one though. This whole nausea, no appetite thing is getting annoying lol.

Farmer’s Market HONEYCRISP (!!!) apple for snack. I had one yesterday and it was phenomenal. I have to get back to the market this weekend and stock up. So good!

Steamy tofu scramble for lunch. I also toasted a slice of gf toast to eat with it. I don’t mind cold toast so it’s fine by me. The scramble came out pretty small so it should be ok.

I’m planning on going to the deli next door to grab some plain rice with steamed veggies for dinner.

I think that my new plan of action is going to have to be small meals every couple of hours because I can only eat little bits at a time. Hopefully this will help until I figure out what’s wrong.

Finally, I came home from work last night to a very sweet surprise!! I had a package from the sweet and lovely Sage!

She sent me Happier At Home, written by Gretchen Rubin, the author of The Happiness Project, which I’m currently reading. It’s such a sweet and thoughtful gesture that she sent me a birthday gift (Saturday, woot!) and I know it will be such a great and important read for me. I took a pic of everything because I thought the card and sticker were so adorable!! She is such a great friend, thank you so much for the incredibly thoughtful and perfect gift Sage! I can’t wait to read it!

That’s all for today! Just waiting until my margarita on Saturday ;) Also, I leave in one week to visit my best friend in Florida for his birthday!! We are five days apart which is pretty cool so I’ll be there to celebrate his birthday with him! I leave Wednesday night and I’ll be back Sunday night. I can’t wait, I need this vacation so bad :)

Some Updates and Some Cuteness :)

Hey everyone! Hope you are all well! I wanted to say first of all that I’m so happy by the response my Pecan Pie Trio received yesterday. It was the first time in a while that I had experimented in the kitchen and was really happy with the result. I’ll explain my lack of food in a second but I just wanted to say that I’m really happy that you all liked the recipe :)

I’m sure you’ve noticed I haven’t been posting as many meals lately. It’s not because I’m lazy or busy or any other excuse like that, it’s mainly because I’ve just been having a hard time eating in general. I’ve mentioned before that I’ve been trying to get answers on why I feel so crappy all the time so I made another appointment with my doctor to try and figure out what the hell is going on. I walked in prepared with a list of symptoms and walked out with a prescription for extensive blood testing. She is basically testing for every autoimmune disease you can possibly think of lol. I went in to the lab to have my blood drawn at 7:30 am the following day to have a double digit amount of tubes drawn. That was fun, ha! I’m still waiting for the results to figure out the follow up tests that need to happen.

This all happened at the beginning of last week and I spent hours between the doctor and the lab. Wouldn’t you know it over the past few days I’ve been experiencing horrible stomach cramping and nausea. Then to top it off somebody hit my car on Thursday while swerving into my lane to avoid another car (I guess, I didn’t see that part because he was in an SUV). I’m fine and there wasn’t too much damage but it turned into an incredibly aggravating experience when he tried to completely avoid any blame in the situation. I understand it was an accident but at the same time he was making it seem like no fault when the accident between the two of us was his fault. It goes beyond that aggravation too but I’m not going to get into it in a public forum. I’ve said enough already lol.

So that’s what’s been going on and why my meals have been scant lately. I’ve been eating but nothing interesting or extensive so I just haven’t bothered to photograph it. However my inspiration and motivation has been renewed with yesterday’s success so hopefully I’ll be able to experiment more in the coming days.

Anyway, I can’t post this without any photos at all! I figured I’d beg for forgiveness for being a crappy blogger the past few weeks with some cute pics of the fur kiddies I’ve been watching for the past few days :)

I couldn’t pass by this scene without taking a pic of it! This is Eddie, one of the kitties. I don’t know how or why he decided to hang out in this position but he just stayed there for a while! I thought it looked so funny and I guess he was comfy. He’s such a handsome boy.

Here’s Tyler just hanging out and waiting for me to join him to snuggle. It’s been so nice being around him. He’s such a cuddlebug.

You have to love this face. It’s impossible not to. He’s the best!

Sorry to be a bit of a downer again but I figure part of the reason I have this blog is to discuss health. Sometimes the topic of health isn’t always fun but it’s life I suppose. I’m glad to have gotten the preliminary blood tests done though because hopefully we’ll be one step closer to figuring out what’s going on and one step closer to getting better. The car accident story was just a vent, sorry lol!

I hope that you are all doing well! I’m starting off this week feeling positive that the bad stuff is in the past and that good things are just around the corner. And hopefully the power of positive thinking will help me feel better so I can enjoy a giant birthday margarita on Saturday ;)

Raw Cocoa Puffs Recipe & Raw Pecan Pie Trio!

Hi everyone! Hope you all had a great weekend! I feel like I spend more time apologizing for not being around than actually posting food but it was a pretty bad week on my end so I just haven’t been able to post. I’ll explain tomorrow because I don’t want to cloud the awesomeness I’m about to share with not fun things ;)

So after the great response I got from the Raw Cocoa Puffs that I made using Isobelle’s recipe, I decided to contact her to see if she would mind if I just posted the recipe here for you. She said yes of course because she is a total sweetheart and also that she misses everyone :) She also suggested that I try playing with the flavors to create new puffed cereal flavor combos and I IMMEDIATELY thought of one flavor – maple pecan AKA pecan pie!! More on that later.

First, here is Isobelle’s amazing Raw Cocoa Puff Recipe:

Raw Cocoa Puffs (Isobelle’s Recipe in her words):

(Serves 2)

 1/2 cup almonds, ground

4 dried plums (or dates, but I recently discovered I’m allergic)

3 tbsp. cacao/cocoa

1 tbsp. pure maple syrup

1 tbsp. softened coconut oil

1/8 tsp. sea salt

 Grind the almonds, sea salt and cacao in a blender or food processor until a fine meal forms. Add in the dried plums/dates, maple syrup and coconut oil – blend again until everything begins to stick together.

The ingredients should form a ball of dough in your food processor.

 (This part takes a long time – but it’s so worth it!)

Take a small piece of the dough and roll it into a ball in your palms. Now, repeat 30, 40, 50 times maybe. It depends on how big or small you make your cocoa puffs. This is a great exercise for practicing patience.

 Dehyrating Method:

Place the balls on your dehydrator tray and dehydrate for 3.5-4 hours. If they aren’t crunchy enough for you by the end of that time, increase to 5 hours.

Sounds amazing right?! Well I decided to take Isobelle’s advice to try and come up with new flavors and combined two of my favorite flavors: maple and pecan. The result tasted EXACTLY like pecan pie!! The dates and maple syrup combine and create an amazing caramel like taste. So delicious!

I’m going to give you the recipe for the “dough” and three ways to use it. Because I love you all that much :) I call it mostly raw because from what I understand maple syrup isn’t totally raw? I’m totally over that and fine with it ;)

(Mostly) Raw Pecan Pie “Dough”

1 1/4 cups chopped raw pecans

4 pitted medjool dates

Scant 1/4 cup maple syrup

1 teaspoon cinnamon

pinch salt

Grind pecans, cinnamon and sea salt in your food processor until it forms a very fine meal. You can leave it a little chunky if you prefer though. Add dates and maple syrup and process until it forms a ball of dough. Your dough will be sticky but should be fully combined.

So here is where we get creative. This recipe is really simple and really versatile and I’m going to show you a trio of preparations. Up first is the puff cereal form inspired by Isobelle!

Pecan Pie Puffs

All you do for the Pecan Pie Puffs is follow the directions in Isobelle’s recipe for rolling out little puffs. It will be tedious work but the resulting cereal will be totally worth it! I dehydrate mine at 104 degrees and it has taken way longer than 5 hours probably because the dough is so sticky. Mine has been going for almost 7 hours already and I’m going to leave it overnight to dry and crisp up. Hopefully it’s not over dried! I tried one half dehydrated puff and it was amazing!

Pecan Pie Dip/Spread

The second “preparation” is to leave the dough as is! This stuff is an amazing dip for apples, graham crackers, ginger snaps, bananas, pretzels… you get the point. Yum!

Pecan Pie Truffles!!

Yeah I did it. FINALLY. I can’t even tell you how long I’ve wanted to make Pecan Pie Truffles and it finally came together without me even realizing it! I took some of the dough and refrigerated it for about an hour and a half so it would stiffen up a bit. I simply rolled it into a ball and then rolled the truffle in chopped pecans. This makes it look pretty and also helps you hold the truffle without getting very sticky. I store these in the fridge to keep them firm but they are equally yummy at room temp (and it mimics the gooeyness of pecan pie!).

Isn’t it pretty?! You can get away with making these truffles small too because they are sweet and decadent. But guess what! No guilt!! It doesn’t get any better than that!

So there you have it. A (mostly) raw, healthier version of a pecan pie. It is so silly that I’m so proud of a recipe that has 5 ingredients but I just love how it came out. I’m even going to submit it for Healthy Vegan Friday right after I publish this post :)

Fun Friday: Countdown to Fall Part 3!

Hey everyone! I’m back with another Fall themed Fun Friday post! Last week Sage made a great suggestion for a post when she asked me about what I do for Halloween! I totally took the idea and ran with it :) So here’s a fun Friday post about one of my favorite holidays, Halloween!

So what I do in terms of candy for trick or treaters and what I would like to do for trick or treaters are two totally different things. I usually don’t have much time to scour the stores for healthy but still fun vegan halloween candy ideas so I just grab something vegan from stores to give out… never healthy but good enough to satisfy the sprinkling of trick or treaters that I get.

Since that is a totally unsatisfying answer I decided to see what kinds of healthy(er) candy options I could find. Here’s a few that could definitely work! Growing up in NY we have the whole wrapped candy rule. Parents get worried about what’s in unwrapped candy so anything home made or unwrapped immediately gets trashed so everything here will satisfy that requirement as well :)

First up we have Yummy Earth lollipops! They are organic, made with natural ingredients and have so many fun flavors! Lollipops are always a great choice, and the kids probably won’t be able to tell the difference. I’ve always wanted to try these anyway so I would definitely buy these and hope for leftovers! In fact, maybe that’ll be the plan this year :)

Next we have Annie’s Homegrown Organic Bunny Fruit Snacks. Lots of fun flavors, they taste great (yes I’ve had these before) and kids love fruit snacks! The only thing is that they may get pricey if you have to buy a lot, but if you mix these with another less expensive choice or if you can buy them in bulk they’d be a great choice!

I also came across a website called Natural Candy Store. They have a whole section on vegan candy and gives you TONS of options. Here’s a few that I found.

They have these yummy looking organic Dark Chocolate Bites. They have 55% chocolate and 70%. I would go for the 55% because I think the kids would do better with that but you have an option :)

They also have these fun vegan Organic “Bug Bites!” I think they are kind of perfect for halloween with just enough of a creepy factor ;)

As you can see, there are lots of vegan options that have somewhat better ingredients than the usual crap ;) I’m sure there’s a ton more out there too!

Sage also asked what I do for Halloween. What I do and what I’d like to do are, again, two totally different things :) I typically just have a mellow night at home watching Ghost Hunters Live and creeping myself out.

I also went trick or treating with the cutest Octopus ever last year :) Sorry for the stupid flipped pic, it flipped during the upload and won’t go back. Wah! Anyway, I’m sure I’ll be trick or treating with her again this year!

What I would love to do is have a really fun Halloween Dessert party! I’d make fun, creepy cocktails and treats.  In the past I’ve made fun Halloween cupcakes. The ones I have photos of were in my pre vegan days… but they were so cute I have to show you!

The photo quality is horrible so I apologize but these are my spider web cupcakes complete with nasty creepy plastic spider.

These are my bloody eyeball cupcakes :) So much fun! Both of these creepy cuppers are totally veganizeable.

Kittee’s beautiful Popcorn Balls! She makes hot pink (so cute!) but I’d love to make them in orange, black and purple. So yummy and so cute!

I’m concocting a recipe for vegan pumpkin pie dip that I’ll share as soon as it’s ready! I would totally serve that too along with tons of other fun treats! :) In my head I’d also have things like spiced cider and some fun halloween themed cocktails. One day I will have a big Halloween blowout. Maybe next year ;) This year I’ll just be mellow as usual… hopefully with some sort of fun treat to snack on.

Cuckoo for Cocoa Puffs

Hey everyone! Before I get into what I’m eating today, like last year I struggled with whether or not to mention 9-11 in my post today. I went back to last year’s post and decided I said everything that needed to be said. You can check out that post here. Today, I’m just going to say that I’m thinking about all of those that lost their lives and their families, and I want to say a big thank you for all of the rescue workers, police officers, fire fighters, military service men and women and civilians that worked so hard in the aftermath and continue to work hard to keep us safe today. You are all so appreciated.

So as I said yesterday I have to switch my hours today to work my long day which means lots of prep work required this morning to get my meals ready. I’ve put together some pretty great meals but breakfast by far steals the show! So much so that I named the whole post after it ;)

Check out this beautiful breakfast! Sliced banana and strawberries topped with some AMAZING Raw Cocoa Puffs swimming in almond milk. I think this may be the perfect meal!

Lunch will be a burrito bowl that I’m going to put together later. After the rice and beans are heated I’ll top with the homemade guac (avocado, lemon juice, garlic, salt, pepper and tomato). It’s going to be really yummy. Don’t have any romaine, boo! That’s the only thing missing.

Dinner is yet another hummus plate. No need for explanation.

My snacks for today. Morning snack will be a yummy Gala apple and my afternoon snack will be 2 Raw Carrot Cake Cookies.
