Working 9 to 5

Hey everyone! Hope you all had a great Tuesday! I flipped my hours around today and worked 9 to 5 and it was awesome! The day totally flew by! I worked an extra hour than usual on my Tuesdays and it still went by faster. I’m definitely a morning person and I’m glad that I can take advantage of being able to get out of work early this week… especially because I have to work until 9 every day next week.

Just have a few meals to show you today.

I almost forgot to take a photo of my breakfast! I got one bite in and remembered ha! Rice cakes with peanut butter and banana and it was so good!

For snack I had more watermelon and cherries. So good!

Lunch was my typical hummus/dolma/veggie plate. Standard but always delicious!

No dinner yet because I have a bit of a headache and definitely am not feeling like eating right now. Hopefully I’ll be able to get something in later.

Looking forward to more swimming, diving and gymnastics tonight. Hope you all had a great day! Looking forward to another early day tomorrow (although I’ll still be working a long day 9-6:30) and I’m hoping to get in some cardio tomorrow evening :)

Have a good night!

Monday Fun(?) Day

Hey everyone! Hope you all had a great weekend. Sorry I didn’t post at all but I just decided to take a break and just relax. My brother had a block party on Saturday so I was there for most of the day. Then yesterday I decided to just lay low and watch the Olympics. I am so inspired by all of these amazing athletes and the timing is perfect as I finally got to start training again today! Tonight was my first training session in a month and while I definitely need to get back into the flow of it, I feel so good knowing I’m doing something good for myself again. In case you missed it, I decided to take a month off from my training sessions so I could try and let my jacked up neck and shoulder heal a little. I have only been doing non impact cardio and while I’m glad I didn’t stop altogether, I felt a bit lazy. Today was pretty good though. I owned all of the ab exercises but when we got into upper body I definitely felt it in my shoulder. It’ll be a slow process but I’ll get there.

I’m still not doing impact workouts because I really don’t want to risk herniating my disk. In fact, one of our friends at the block party just had surgery on his neck for disk herniation and I just don’t want to ever have to do that. I’ve been questioning whether or not I should do Tough Mudder because I’m so afraid of falling the wrong way and I haven’t been able to run because of the impact. I still have some time to decide but I am just so weary of injuring myself even more. I’ve had to give up boxing for a while (I don’t know if I’ll be able to do it again, especially with the same skill and stamina as before. It is pretty devastating because I really love it) and it would suck to let this go as well but my health and safety come first I guess. My Dr. had also advised me not to do it…

OK, enough with the boohoo talk ;) Let’s get into some yummy eats!

My mom’s boss was nice enough to send me this beautiful zucchini that she grew in her garden. Looks good right? Nice normal zucchini.

OK or the biggest zucchini I’ve ever seen in my life! I decided to put a regular sized banana next to it so you could see the scale of it. This zucchini is literally the length of my arm from wrist to shoulder! I can’t wait to use it!!

OK so on to today’s meals :) For breakfast I enjoyed a yummy cherry chocolate smoothie. It still amuses me that it is a different color every time I make it.

For a morning snack I had unpictured clementines. So yummy!

For lunch I had some rice and beans and veggies from the deli next door. I didn’t get a photo of it but I had this one so imagine a smaller portion of this (like half of it or a little less) for $3.00. Yum!

After the gym I wanted something fresh for dinner so I made this hummus sandwich with lots of fresh veggies. I used a gluten free tortilla as my bread then crammed it full of spinach, tomato, cucumber, carrot and sun dried tomato. There is a thin layer of hummus on the tortilla and I ate the rest of the carrot that I peeled on the side. It was really yummy but very messy. It basically fell apart as I ate it but it was fine. I’m so full!

I’ve been craving sweets lately so I made myself a big bowl of watermelon and cherries to enjoy later as I’m watching the Olympics. Good stuff on tonight: swimming, diving, gymnastics… definitely going to be good! I’m still stuffed from dinner but this will be a nice treat a little later on.

OK that’s all for today! I hope you all had a great Monday and that Tuesday treats you well. This will be a good week as I am going to be getting out early all week so I’m hoping to get to the gym an extra evening or two this week :)

Have a great night!

Fun Friday!

Hey everyone! Happy Friday! In true This Is What I Eat fashion, welcome to my Fun Friday Post! This week I’ll show you some things that made me laugh, and a few things that I’m loving. Most are from Pinterest, naturally ;)

As most of you know, my best friend lives in Florida. I found this on Pinterest and it made me laugh my ass off and I texted it to him right away and he laughed his ass off too. This describes us perfectly ;) (source: someecards)

This one also made me think of him/miss him. In case you were wondering what our friendship is like, these two pics give you a pretty good insight ;) Believe it or not, I found this pic from following “Unlimited Texting” on Facebook. Yeah. I like texting. Don’t judge ;) I actually really don’t like talking on the phone so most of my communication happens through text and e-mail. That’s just a bonus tidbit because I love you guys.

This pin also made me chuckle BECAUSE IT IS SO TRUE!! That is pretty much the only burner I use :X How about you guys, is this your favorite burner too?!

As most of you may know by now, I LOVE putting together really cute care packages to send out in the mail. I also love gift baskets and cute things like that. I have actually thought about starting a gift basket business in the past. Anyway, I stumbled across Sometimes Creative through some very cool pins on Pinterest, including the one above. This one is a “Box Full of Sunshine” and I thought it was so creative and thoughtful. She sent this package to a friend that had been feeling a little down. She packed it full of yellow and orange items to help cheer her friend up. How cute and thoughtful is that!?

I don’t know why this photo is so small but you can click HERE to see the full post. Also from Sometimes Creative, this is a Favorite Things party! She got the idea from Oprah’s favorite things episodes (I’ve never watched much Oprah but I’ve heard of this) and decided to invite a bunch of friends over, and each picks one of their favorite things. They bring 3 of that item and 3 recipients are drawn to take that item home. I thought this was such a cute idea and a great way to get introduced to new foods and products!

This just made me smile. I need to get to the beach soon. I’ve been trying to go with my sister in law and Delilah but it rains every time we try to go! Maybe next week.

I also found this daily workout plan on Pinterest. I’d give you the original link but when I tried to click it on Pinterest it went to a different page. There is credit to the creator on the photo though (which you can click to enlarge). This daily workout looks really great and definitely manageable! I’m planning on doing them first thing in the morning and I’ll do the circuit twice. I’ll also do the jumping jacks on my rebounder to avoid impact on my neck (running and jumping still bother me). I’m really excited about starting this! It’ll be a great way to get the blood flowing in the morning and won’t leave me too sore to work out in the afternoon.

Finally, today is the first week of Healthy Vegan Friday! You are invited to submit a healthy vegan recipe and some recipes will be chosen to be featured by the hosts: Gabby, Shelby and Carrie! The goal is to share vegan recipes that emphasize healthy, fresh, whole foods. I love this idea and am definitely planning on participating. :) Thanks for hosting this ladies!

The first recipe I’m submitting are my Gluten Free Carrot Spice Muffins! I really love this recipe because they are so delicious and warm from the spices. They are great for breakfast with some fruit or as an on the go snack. They taste so good but are good for you :)

That’s all for today’s Fun Friday post! I hope you liked it and I’m definitely going to be on the hunt for some really fun things for next week. I’m in a crafting/DIY mood lately so maybe I can find some fun new projects to share with all of you.

Are you guys going to watch the Opening Ceremony for the Olympics tonight? I’m definitely going to be tuned in. In the past I haven’t been too into the Olympics but since I’ve been more interested in fitness and athleticism lately I’m really excited to watch the world’s best athletes compete.

I hope you all have a great Friday night!

Cold Brewed Cafe (F)au(x) Lait!

Hey everyone! It’s almost Friday! I’m extra excited about this Friday because I have the whole entire weekend off! Not only that, my boss is out of town next week and told us that we don’t have to work until 9 next week :) I’ll be heading in earlier and leaving earlier which is very exciting! I get to go to the gym after work and still get home at a decent time. That makes me so happy.

Anyway, today’s post holds a special place in my heart. As you know, I kicked my serious coffee addiction a few months ago and have been drinking only decaf once in a while as a treat. Well, look what greeted me when I came home from work on Tuesday:

My decaf Cafe Du Monde coffee! I had mentioned that I was going to try to cold brew my coffee so first thing Wednesday morning I put my coffee and filtered water in a mason jar and let it brew away.

Here it is brewing away! Looks all nice and muddy, just the way I like it ;)

So I made a little bit of a boo boo. The link suggested that it brews for 12 hours but I thought I read that it said 24 hours. Since I like my coffee strong I decided to leave mine for 36 hours. That’s a lot of extra time!

When I came home from work today I set up a super high tech filtering system.

Yup, that’s the old coffee filter in a strainer mounted on a glass bowl trick. It’s pretty impressive huh? No? Yeah I didn’t think so either. It did it’s job though!

Look at it go! It took a while because as you can see, it wasn’t exactly flowing right through. It took patience but I was definitely rewarded in the end.

That’s right! 2 whole cups of this liquid gold! As you can see it isn’t exactly a high yield but it is so worth the time and the effort. Now I just know to have two jars brewing at the same time so it’ll last me a little longer.

Thankfully the Cafe du Monde coffee can reminded me how I drank my coffee almost 3 years ago. The signature drink is a Cafe Au Lait which is basically equal parts coffee and milk. I had mine iced when I drank it at Cafe Du Monde (only 2 months before going vegan!). Today I made mine an Iced Cafe (F)au(x) Lait (get it? Yes, I know I’m a nerd) by using almond milk and I sweetened it with stevia.

Check out this absolutely glorious cup of coffee! It is indeed smooth and definitely less bitter. And it looks so cute in my mason jar mug! It was definitely strong so next time I’ll only leave it for the suggested 12 hours but it was still delicious! I am so in love with the chicory in this coffee. If you have never tried this coffee I definitely recommend it!

In honor of the fact that this coffee is from New Orleans I used my skull and crossbones ice cubes :) Check that guy out, he looks pretty intense!

That’s all she wrote for today my friends. Looks like I apparently have to get ready for this allegedly apocalyptic storm that is heading our way. Hopefully there isn’t too much damage and we keep our power. I guess we’ll see!

Stay safe everyone and I’ll see you for Fun Friday! Have a great night!

Happy Hump Day!

Hey everyone! Hope you are all settling in here! I know I’m still getting used to it but I’m really loving the freedom I’m feeling here.

I’ve made it a goal this week to really make the effort to get back to eating a lot of raw fresh foods. I remember how great I felt doing the Crazy Sexy Diet Cleanse and just feel like I really need to focus on getting back to that. I think today was a great start :)

For breakfast I enjoyed a yummy Cherry Chocolate Smoothie. Frozen cherries (from my stockpile ;) ), almond milk, Vega Choc-a-lot Energizing Smoothie Powder and a huge handful of spinach.

For a late morning snack I am going to enjoy this bowl of delicious strawberries and farmer’s market blackberries.

Lunch will be this vibrant hummus plate. I am sure you are shocked to see stuffed grape leaves (Ha!). I also cut up two giant carrots and the rest of my baby roma tomatoes. This is going to be so good.

Snack will be a Coconut Cream Pie Larabar. This flavor is so sweet and decadent it is hard to believe it is healthy! It’ll be a perfect pick me up on this long day!

Dinner is going to be an S&M salad (greens, hemp seeds, dulse and avocado). I tossed the avocado in lemon juice to hopefully prevent browning.

That’s all for today. Today is my long day and then it is smooth sailing from here. I’m so excited that I have this weekend off (for sure this time) and I’ll be going to my brother’s block party on Saturday! It should be fun so it is definitely something to look forward to :)

Have a great day everyone!

Hi everyone! Thank you SO MUCH for following me over here. I was a little nervous about picking up and moving but I am glad I made the decision to do so! As I hinted in my post yesterday on Blogger, I apparently used all of my photo space in Picasa! Those darn huge files I upload! I had the option of upgrading my disc space but I decided to just jump ship and get my very own .com. The decision was actually pretty simple as I had been debating it for a while. I am enjoying the freedom I have in designing the site so this was definitely a good choice.

I didn’t really want to skip a beat in my blogging so I decided to work through the night to make a presentable website. I hope you all like it! I am happy with the final product but it took a long time to get here ;) As you can see, I decided to bring my Blogger archives over here. I am leaving my Blogger site active so people can find me here.

I’ll be adding a few more pages but wanted to get the important ones up and running for you. I’m working on a page with links to all of my favorite DIY/crafting/gifting websites. Is there anything you would like to see on this site? Any pages you’d like me to add? I would appreciate any feedback you have!

Anyway, thank you so much for following me over here and I hope you like my new space! Make yourselves comfy, hang out and enjoy!

And look, I can add photos! ;) You can’t keep a photographer from posting pictures. I just thought this was funny.

Have a great day everyone! Back to our regularly scheduled programming tomorrow.

Planning for Success

Hey friends! Thank you all so much for helping me count down to my glorious day of freedom last week :) Your kind words always help me get through the busy times! I enjoyed my day off by spending some time with Delilah and then relaxing and watching a bunch of TV. Probably not the most productive way to spend my time but I was able to rest my body and I was happy to be able to do that.

Today’s post has a little bit of everything I think! I have a meal from yesterday, some planning for the week and some inspiration :)

Last night’s dinner was really yummy. A home made Chipotle bowl with rice and beans, salsa, daiya and avocado. I served with with a tortilla since I’m too much of a spazz to roll a decent burrito that actually stays together. After this meal I put the rest of my Daiya in the freezer because a) I’ve been eating it too much lately and b) It seems to be lasting forever! Seriously the bag just won’t end!

The perfect bite!

Today I took a ton of time to get a lot of fruit ready for smoothies for the week. I really want to get back into the habit of drinking smoothies every day and being prepared is key. I added 4 more bags of cherries to my other two in the freezer (I’m going to make these last!) as well as some strawberries. I had the bananas already and just added them to the pile so you could see how much fruit I have ha! I also have half a bag of frozen blueberries as well as some frozen pineapple. I think I’m set on smoothies for a while!

While I was cleaning I found this old fortune and thought it was so perfect for the headspace I’m in right now. “You’ll never know what you can do until you try.” This is so true!
So I have a question. I just tried to upload another photo and it said that I’m out of space in my Picasa account or something. I didn’t even know I had a Picasa account and when I clicked to get details it said I had 5 GB of drive space that I wasn’t using. I’m confused I guess and if I don’t upgrade does that mean I can’t upload any more photos at all? Has this happened to any of you, and if so did you just pay to upgrade? Please let me know, I’m so confused!
I hope that you all had a great day and that Monday wasn’t too tough for you!

Hey everyone!! Happy Saturday :) I hope you are all enjoying the day. I’m getting ready to head out on my last day of work before one day of freedom! I know it’s hit or miss on whether or not I post on a day that I work a wedding but I had something fun to share with you so here I am!

I mentioned last week that it was my friend’s birthday and that I had put together a relaxation kit for her. Included in that was two little packets of face mask powder, tea bags (special bags that brew in cold water and make iced tea! She said they were great and very refreshing!), a plastic to go cold cup (to hold said iced tea), face and body creams, home made trail mix (in a mason jar obviously) and a bottle of wine. I was going to make her a batch of cookies but as you know I worked every day and barely had 10 minutes to breathe so I just couldn’t. Since I’m working with her today (I’m assisting someone else but she is the second photographer on the job) I decided to push myself to make them even though I was exhausted.

Check out what I made!

Check out these gorgeous Chocolate Coconut Thumbprint cookies! I asked the birthday girl what her favorite flavors are and she said chocolate, coconut, raspberry and pumpkin. I know that chocolate thumbprints would be a great way to incorporate most of those flavors!

I used Isa Chandra Moskowitz’s Chocolate Thumbprint cookie recipe from Vegan with a Vengeance.
The only change I made was I rolled the cookies in coconut before I baked them the first time to add another one of her favorite flavors in. They worked out perfectly!

If you want to make a Chocolate Thumbprint cookie definitely try this recipe. It came together really fast and cooked perfectly :)

I also had to show you this yummy meal. I wanted to eat the last of my tofu so I can move on from this soy frenzy I’ve been on and I figured why not go big? ;) I made a tofu scramble with tons of spinach and then topped it with Daiya. I covered the pan and let the Daiya melt for a few minutes then put the scramble on a tortilla.

My finished breakfast burrito (eaten for dinner). I bet it would have been even better with avocado!
That’s all for today. I hope that you all have a really great day! I’m off to work a long ass day and then tomorrow I enjoy some freedom! :) Have a great day friends!

Fun Friday! Treating Myself

Hey everyone! I hate to start off my fun Friday post on a bit of a down note but I can’t really gloss over the news I woke up to. Pretty much as soon as I woke up I heard about the horrific shooting in an Aurora, Colorado movie theater in the midnight showing of The Dark Knight Rises. I was completely horrified to think that someone could do something so heinous and disgusting. My thoughts are with those impacted by this tragedy.

Later on today I was running errands and ran into a TON of traffic. I finally passed the source of the problem which was a 4 car accident. They were all in one lane. I obviously didn’t see what happened but my guess is that the first car either stalled or just stopped at a green light and the others just crashed right into each other, one right behind the other. It didn’t look too serious, I think everyone was ok but one of the cars was completely smashed in the back and had quite a bit of damage in the front. I’d be surprised if that car hits the road again. Luckily the passenger areas of that car didn’t look damaged.

What’s my point in all of this? At the risk of sounding morbid (and that isn’t my intention, I promise), you don’t know how long you have on this earth. For this reason, we need to make sure that we live every day to the fullest with no regrets.  I know how easy it is to let life pass you by, letting your dreams get away from you and wishing you had spent your time differently. I’m totally guilty of it myself. However, there is no excuse for it anymore. It is so scary to take risks but we are all here for a reason and we should not be afraid to embrace that. So for me, I’m going to stop making excuses and start making changes in my life. I have spent too many years being unhappy and it is time to start making moves toward happiness and fulfillment. I owe it to myself and I’m worth it, and you are too! Life is way too short my friends.

OK. I’m sorry if that was morbid or depressing but I was just incredibly moved by today’s events and wanted to touch on it. I’m going to turn the tone of this post around right now though! Today’s Fun Friday post will feature some presents I bought myself this week (I’ve been working hard, I totally deserve it! ;]) as well as a few random things I’d like to share :)

The first gift I got for myself was inspired by Gabby! I saw them on her blog and immediately was obsessed with them. How adorable! I just got them in the mail yesterday. They came in a set of 4, can’t wait to use them! Photo courtesy of Amazon :)

I got each movie for $9.50. Can you believe I didn’t have Fight Club in my collection yet?! My movie collection is severely lacking anyway so I’m hoping to buy one movie per month to bulk it up a bit. You know, for rainy days ;) I caught Zombieland randomly one night on tv at like 1am and loved it so decided to add it as well :)

This purchase was inspired by Sara and her travels! A few years ago I was in Destin, Florida for my brother’s wedding. We decided to fly in and out of New Orleans and drive to Destin so I was able to spend one glorious day and night in New Orleans. It went by waaaaay too quick and I fell in love with it immediately. We ended up at Cafe Du Monde because it’s kind of a must when you are in New Orleans. I wasn’t vegan yet and enjoyed a cup of their coffee (iced naturally) and it was AMAZING. I still think of that coffee. I had no idea that they sold decaf and then I saw that Sara had picked some up! I had actually been thinking about ordering some for months and knowing I could get decaf sealed the deal. I ordered it immediately!
Now, as you all know I kicked my pretty intense coffee habit a few months ago. I am so proud of myself for not picking it back up. Right now I treat myself to one DECAF coffee (typically a decaf soy latte) once a week, typically on a Sunday morning. I recently read this post which discussed a topic that Gabby had discussed prior on her blog as well. I basically learned that cold brewing coffee will result in a smoother, less bitter taste AND the coffee will be almost 70% less acidic!! That is great news! I plan on cold brewing this coffee as soon as I receive it in the mail :)
That’s it for the gifts I bought myself :) I found a few other things I’d like to share though!
I remember that you guys were amused when I said I was going into “beast mode” and had to share this with you! Apparently I’m not the only one that says that ;)

How adorable are these “Train Like a Beast Look Like a Beauty” tanks! I think Cassey from Blogilates is doing a giveaway with these tanks but I just wanted to show you because I thought they were awesome!

Finally, another Pinterest find! How cute are these little mason jars with pre-mixed cocktails! No need to spend all that time behind the bar when you can mix your drinks, pour them separately and let your guests grab when they want to! Love this idea and you know I’m a sucker for a mason jar ;) Original post here!
Thanks for bearing with this long post and sorry it was a little depressing in the beginning. I hope that you had a good Friday and that you enjoy your weekend! One more day until I get to relax!

Whole Lotta Whole Foods!

Hey everyone! Happy Thursday :) It’s so close to Friday which is awesome! Unfortunately my weekend off has been cut in half as I was contacted by a photographer last minute to work on Saturday. So that will be my 13th straight day of work, 6 of those days being 10-12 hr days.  As you can imagine, I can’t wait for Sunday ;)

I wanted to go see Delilah after I got out of work today so I decided to make my Whole Foods run early and be there by 8am when they open. I got an awesome haul and some great meals out of it!

Check out the haul first!

Produce haul: HUGE container of spinach, carrots, baby bok choy, broccoli, cauliflower and two avocados.

I also got strawberries which I forgot to put in the other photo. Stuffed grape leaves, Vega Choc-a-lot, garlic and herb cashews, cashews & peanuts (for trail mix), dried fruit (for trail mix), brown rice crackers, 3 larabars (key lime pie, coconut cream pie, lemon) and an apple Pure bar.
Since I was going to be at Whole Foods, I figured I’d just grab breakfast and lunch there too. Every single meal and snack I’ve eaten today (all ingredients in dinner too) was purchased at Whole Foods :)

For breakfast I grabbed some steel cut oats and topped it with my own cinnamon, stevia, raisins and walnuts.

2 plums for snack that were purchased the last time I went to Whole Foods.

Wouldn’t you know it, I commented on Shen’s post just yesterday that I wished my Whole Foods had Tofu Scramble in the morning. Of course when I look today they had it for the very first time… well at least that I had seen! I decided that it wouldn’t be right to just squander this opportunity even though I had vowed not to eat tofu today ;) I grabbed some scramble, a teeny bit of potatoes (on the left side of the container at the bottom… those teeny tiny pieces are tiny cut potatoes and onions) and I decided to add some fresh veggies and grabbed some tomato and cucumber salad. Such a great lunch!
Dinner was a gluten free tortilla pizza with lots of yummy spinach and some Daiya. So delicious and pretty too! And all ingredients were purchased at Whole Foods ;)
Thank you Whole Foods for fueling my day and my week! Today was a pretty good food day. Hopefully the next two days will go quickly! Hope you all have a lovely evening :)
