Orlando Vacation 2k13: What I Ate

Hey everyone!! I’m back from Orlando :) I had an AMAZING time and I’m excited that I have tons of pictures to show you! So many, in fact, that I’m going to have to split this into two posts. So today I figured I’d share with you the yummy food that I ate and tomorrow I’ll show you some of the cool and pretty things I saw during the trip. For those of you on Instagram I know you’ve seen most of these pics :)

So here are the yummy things that I ate! Be forewarned that this stuff isn’t particularly healthy… I made a deal with myself before that I’d enjoy vacation and get back on the CSD train when I got back :) So here’s (some of) what I ate on my vacation!

I’ve come to realize that as I get older I’m becoming more and more of a germophobe. Walking through the airport I realized that planes are gross, and people are gross so I picked up some Airborne, mixed it with a bottle of water and sucked it down.

We stayed in for the most part on Thursday and ate there so our first meal out was for lunch on Friday. We decided to go to Loving Hut because it’s so damn good :) I really wanted to try something different but I decided to stick with my usual which is “Combo 1.” It has a fresh summer roll, golden rice, tofu and veggies. It is so good and definitely not too heavy (which is what I was afraid of with some of the other dishes). I could eat buckets of that rice, it’s SO GOOD.

After Loving Hut we decided to go to Raphsodic Bakery, which we first tried the last time I was there. I LOVE that they put the word “Love” on all of their bags and boxes. Anyway, we chose four different treats to share because we couldn’t decide. There is a slice of pumpkin loaf, a chocolate chip sandwich cookie, a chocolate almond biscotti, and chocolate marzipan brownie. Everything was amazing but believe it or not the biscotti was my favorite! And Shen, now I know how you can eat just half of your yummy desserts :)

My friend happens to live near a Mellow Mushroom which I had read offers vegan pizza. This is not something I come across every day so we decided to bring pizza in. I don’t remember what day but it was early on so I want to say maybe Friday night? Anyway, I got a small (10 inch) Kosmic Karma pizza which (when veganized) had roma tomatoes, sun dried tomatoes, spinach, and daiya. It was great and it literally lasted me all weekend.

For brunch on Saturday we went to our usual brunch spot, Ethos Vegan Kitchen. I really love this restaurant. The food is always good and their new location is larger and has a great atmosphere. However, this is the one meal of my trip that I kind of regretted a little. Not because it wasn’t good because damn it was actually REALLY good. I decided to go for something on the menu that I knew I’d never be able to recreate because sometimes that’s the fun of going out. I decided on the biscuits and gravy. Like I said, the food was delicious but holy shit was it heavy. I got about 2/3 of the way in before I had to throw in the towel. And I didn’t eat again until that night because I couldn’t shake that heavy feeling for a long time. I want to re-iterate though that the food wasn’t bad by any means and in fact was really delicious! I just should have known better than to order a really heavy dish, especially for my first meal of the day. Ethos is definitely still one of my fav spots in Orlando!

Every time I visit I like to bake something for my friend and his friends. This time I decided to take something I found on Pinterest and veganize it. I saw the recipe for Funfetti Cheesecake Cookie Cups and thought they were so cute! I decided to veganize it and make my life a little easier so I made them into bars! Look how cute they came out. Basically I used the cheesecake recipe from Vegan Heartland’s Chocolate Chip Cookie Dough Cheesecake Bars (doubled with sprinkles added at the end) and the chocolate chip cookie recipe was Super Vegan’s Best Chocolate Chip Cookie Ever recipe. I followed the directions on the pinned recipe (I had to cook it a little longer though) and it came out really well! Above is the only piece that I ate but it was damn good.

My laziness got the best of me for Cinco de Mayo so I went the easy route and made some vegan nachos. They were REALLY good. All I did was heat/melt some spicy fat free refried beans and Daiya Cheddar on some tortilla chips. Simple but tasty.

I talked a big game about how I was going to partake in some alcoholic beverages but the reality was that I only drank this single glass of wine. Partially because I am a cheap date and it doesn’t take much for me to start feeling warm and partially because I just wasn’t feeling it. This glass of wine was really delicious though. This is by far my favorite wine and I can’t find it here in NY! Wah!

So these are the meals and beverages that I thought were photo worthy. As you can see we ate a lot of meals in and made some meals and snacks last pretty much the whole weekend. Everything was delicious but I’m definitely craving some fresh produce and am looking forward to getting back on track with a Crazy Sexy Diet inspired lifestyle.

Fun Friday: Ready For Fall!

Hey everyone! Happy Friday! I hope that this week has treated you all well. I’m really excited for the weekend since I’ll be going to my friend’s wedding in Massachusetts on Sunday and it is going to be a really great time! I’m so happy for her :) It’ll also be nice because I am going to see some friends I haven’t seen since I graduated college in 2005! It’ll be great to catch up.

So as you all know today is Fun Friday! As you all know, I am so totally in love with the fall and I am practically counting the minutes until it gets here. The funny thing is that my birthday is also the first day of fall (September 22), but I’m way more excited about the start of my favorite season :) I figured I would do a fall themed fun Friday post because there are so many great things about the fall to be excited about. Here’s just a few!

Look how brilliant these chocolate covered apple slices are! I don’t know about you guys but I am a total sucker for chocolate and/or caramel covered apples but find it a bit difficult to eat the whole things…mostly because I turn into a gross, sticky mess! These slices are adorable and way less messy. Well less messy if you can wait for the coating to harden! Just as a heads up, I found this on Pinterest and the referring website is not in English ;)

PUMPKIN!!!! I don’t know about you but I’m so excited about cooking with pumpkin. It is one of my favorite flavors and always reminds me of the fall and of the holidays. I can’t wait to try these Pumpkin Cream Cheese Truffles! Very easily veganizable recipe :)

Halloween!!! It is one of my favorite holidays (Thanksgiving being the other fav, obviously another fall holiday!) and I just love everything about it, especially making fun, spooky treats. Check out these super cute Oreo Mummy Pops! So adorable and really easy!

Of course there is the beautiful scenery. The colors, the smell of the air, the absolutely perfect, crisp weather. There is nothing about the fall I don’t like. I’m so lucky to live in a place where I really get to enjoy the season.

Mmm a frozen margarita and a really great Mexican meal. What does this have to do with the Fall? Well, this is my intention for my birthday! It was my intention for my birthday last year too but I ended up with the flu so it didn’t happen. Hopefully this year my birthday margarita will be a reality :)

How beautiful is this?! I found it on pinterest but the link back wouldn’t work so I don’t even know what the source/recipe is :( It’s definitely something I plan on working on though! It looks like an apple “bowl” filled presumably with apple cinnamon oatmeal. There is nothing like a warming bowl of spiced oats on a cool fall day.

Fall produce! I can’t wait to roast a bunch of veggies (yummy eaten with hummus!), eat lots of apples and squash and all of the other delicious fall treats. Yum!

This barely scratches the surface of reasons why I’m excited about the fall :) It makes me so happy knowing it is right around the corner! What are some of your favorite things about the fall?

OK friends, it’s time to pack up my stuff for the weekend and to rest up. I didn’t get to sleep much because I got home from the wedding late last night so I’m definitely ready for a good night’s sleep :) I should be able to do a quick post tomorrow then I’ll be back either Monday evening or Tuesday!

Fun Friday! DIY and Some Fall Treats!

Hey everyone! Happy Friday! Welcome to this week’s Fun Friday post :) As usual I picked a bunch of my favorite pins on Pinterest to share with you. Most of today’s pins are some cool DIY projects that I pinned, but there were also a few treats that I had to share! I saw that Sara had pinned a bunch of Fall recipes that looked amazing and I can’t wait to try so I figured I’d share those with you as well :)

I absolutely love this idea of using a picture frame to make a cupcake tray! It looks so adorable and you can decorate it however you want. It is so different and looks so cute! Check out the original post on Oh! Party.

Check out this super cute DIY Workout Shirt! It looks so cute, I love the back of it! Great way to recycle old t-shirts.

I don’t know if any of you are fans of glitter. Typically I’m not super into it but I love the look of this glittery glass! It is so easy too, I definitely want to give it a try!

This, my friends, is by far my favorite pin of the week! Pumpkin Pie White Hot Chocolate!! This sounds so delicious and is really easy to veganize! I really can’t wait to try this!

This week I am submitting my Raw Buckwheat Cereal for Healthy Vegan Friday :) I seriously love this stuff and I hope that other people do too!

Fun Friday! Treating Myself

Hey everyone! I hate to start off my fun Friday post on a bit of a down note but I can’t really gloss over the news I woke up to. Pretty much as soon as I woke up I heard about the horrific shooting in an Aurora, Colorado movie theater in the midnight showing of The Dark Knight Rises. I was completely horrified to think that someone could do something so heinous and disgusting. My thoughts are with those impacted by this tragedy.

Later on today I was running errands and ran into a TON of traffic. I finally passed the source of the problem which was a 4 car accident. They were all in one lane. I obviously didn’t see what happened but my guess is that the first car either stalled or just stopped at a green light and the others just crashed right into each other, one right behind the other. It didn’t look too serious, I think everyone was ok but one of the cars was completely smashed in the back and had quite a bit of damage in the front. I’d be surprised if that car hits the road again. Luckily the passenger areas of that car didn’t look damaged.

What’s my point in all of this? At the risk of sounding morbid (and that isn’t my intention, I promise), you don’t know how long you have on this earth. For this reason, we need to make sure that we live every day to the fullest with no regrets.  I know how easy it is to let life pass you by, letting your dreams get away from you and wishing you had spent your time differently. I’m totally guilty of it myself. However, there is no excuse for it anymore. It is so scary to take risks but we are all here for a reason and we should not be afraid to embrace that. So for me, I’m going to stop making excuses and start making changes in my life. I have spent too many years being unhappy and it is time to start making moves toward happiness and fulfillment. I owe it to myself and I’m worth it, and you are too! Life is way too short my friends.

OK. I’m sorry if that was morbid or depressing but I was just incredibly moved by today’s events and wanted to touch on it. I’m going to turn the tone of this post around right now though! Today’s Fun Friday post will feature some presents I bought myself this week (I’ve been working hard, I totally deserve it! ;]) as well as a few random things I’d like to share :)

The first gift I got for myself was inspired by Gabby! I saw them on her blog and immediately was obsessed with them. How adorable! I just got them in the mail yesterday. They came in a set of 4, can’t wait to use them! Photo courtesy of Amazon :)

I got each movie for $9.50. Can you believe I didn’t have Fight Club in my collection yet?! My movie collection is severely lacking anyway so I’m hoping to buy one movie per month to bulk it up a bit. You know, for rainy days ;) I caught Zombieland randomly one night on tv at like 1am and loved it so decided to add it as well :)  

This purchase was inspired by Sara and her travels! A few years ago I was in Destin, Florida for my brother’s wedding. We decided to fly in and out of New Orleans and drive to Destin so I was able to spend one glorious day and night in New Orleans. It went by waaaaay too quick and I fell in love with it immediately. We ended up at Cafe Du Monde because it’s kind of a must when you are in New Orleans. I wasn’t vegan yet and enjoyed a cup of their coffee (iced naturally) and it was AMAZING. I still think of that coffee. I had no idea that they sold decaf and then I saw that Sara had picked some up! I had actually been thinking about ordering some for months and knowing I could get decaf sealed the deal. I ordered it immediately!
Now, as you all know I kicked my pretty intense coffee habit a few months ago. I am so proud of myself for not picking it back up. Right now I treat myself to one DECAF coffee (typically a decaf soy latte) once a week, typically on a Sunday morning. I recently read this post which discussed a topic that Gabby had discussed prior on her blog as well. I basically learned that cold brewing coffee will result in a smoother, less bitter taste AND the coffee will be almost 70% less acidic!! That is great news! I plan on cold brewing this coffee as soon as I receive it in the mail :)
That’s it for the gifts I bought myself :) I found a few other things I’d like to share though!
I remember that you guys were amused when I said I was going into “beast mode” and had to share this with you! Apparently I’m not the only one that says that ;)

How adorable are these “Train Like a Beast Look Like a Beauty” tanks! I think Cassey from Blogilates is doing a giveaway with these tanks but I just wanted to show you because I thought they were awesome!

Finally, another Pinterest find! How cute are these little mason jars with pre-mixed cocktails! No need to spend all that time behind the bar when you can mix your drinks, pour them separately and let your guests grab when they want to! Love this idea and you know I’m a sucker for a mason jar ;) Original post here!

Fun Friday!

Hi friends! I’m sorry yesterday was a bit of a bummer but I promise today will pick up! I’ve been a little bummed that I haven’t been feeling well and that I haven’t been able to exercise but you know you can always count on Pinterest to lift your spirits! This round of Fun Friday is going to be based on some fun and inspiring things that I’ve found on Pinterest recently :) Trying to stay positive and tell myself that better things are on the horizon!

I don’t know why but I thought that this was really beautiful and perfect. The idea of this instantly makes me happy and puts me in an better mindset. 

This just makes me laugh my ass off. It is so simple but perfectly hilarious!

I found this quote really inspiring because I can be guilty of this. I tend to let a bad day linger and I can blow it out of proportion and/or take it out on people I care about. It is so important to remember that a bad day is just a bad day. Things will get better. And it they don’t then you know that it is time for a change!

This is what I try to do every day :) I love this, I kind of want to find this or make one for my bedroom.

I repinned this from Sage who always shares the best advice.  This is so inspiring to me because it is so true. I’ve been afraid of chasing my dreams for so long and constantly make excuses as to why I shouldn’t or CAN’T. Can’t should be considered the ultimate four letter word because it carries so much more weight than “fuck” or “shit.” Seriously. Anyway, it’s time to pursue my dreams. And I know what the first step is to take ;)

Um, can we talk a little bit about how AMAZING and HILARIOUS these rings are?! I don’t know where this whole mustache craze came from but it is so funny. I love the guy on the right with the hat.
I’m pretty obsessed with these super cute DIY glasses! She just used the back of a paint brush to dot acrylic paint on the glasses. Then she put them in the oven (I can give you specific instructions if you are interested, or just check out the pin! ;]) and check out these super cool glasses! I think I definitely need to make these.
Alright friends, I’m off to run some errands before my wedding today. Yes, I know it is 8:30 am but alas this is the only time I have :) I like it better too because the stores aren’t crowded. It is my good friend’s birthday tomorrow and I’m working with her on Sunday so I am putting together a super fun gift so I need to go and grab a few things for it :) I’m so excited about this gift and I’ll definitely show you guys what I came up with… probably on Sunday! I hope you all have a great Friday and I’ll definitely do my best to pop in and keep you updated on my busy weekend and the yummy food I’m eating to keep my energy up :) I think I have next weekend off too which is great motivation for the next week as well!

Fun Friday… On Monday!

Hey everyone! I just realized that I’ve neglected my Fun Friday posts for 2 weeks! That is totally unacceptable so I’m halting everything and bringing a special edition of Fun Friday on Monday :) No theme this week, just some fun stuff that I’m into.

I really wish I could take credit for this but I found it on Pinterest and thought they were so beautiful! These are definitely the epitome of summer in a glass!

Haha so as I talk about being unstylish I’ll show you this skirt I just picked up in Old Navy. It’s one of the rollover jersey skirts that are so comfortable. The color is SUPER pretty and probably one of the main reasons I got it. I’ve been working hard so I decided it was time to buy myself another present ;)
My new “gym bag/” I’ve shown you the contents of my gym bag before (boxing and mma gloves, etc.) but now I’m trading that in for my yoga mat and this no slip towel for Bikram Yoga. I found the towel on sale thankfully because these things can cost $75! That’s insane!
I’ve mentioned before that I want to get a half sleeve tattoo. It is hard for me to verbalize what I want but then I found this! It has the same general idea of what I want but I’d definitely make a few changes to make it more my style. I also wouldn’t have it start on my back (I already have a large one on my back) but I love this one :)
I now have this crazy obsession with mason jars. I want to put everything in a mason jar! I just chose this photo because they are so small and adorable and fresh squeezed lemonade sounds amazing right now.  I love the lids too! I have a feeling that if/when I start a business it will definitely feature lots of mason jar packaging :)
OK I think that’s all for Fun Friday… on Monday :) Sorry I forgot, been so crazed lately! I confirmed that I’m working Friday, Saturday and Sunday this week too so it’ll be another intense weekend. If anyone has any suggestions of ways to keep up energy I’m all ears. I’m going back to a very alkaline heavy diet too, especially since I’m starting Bikram yoga tomorrow too. Hydration will also be key!

Things That Inspire Me…

Hey everyone! First of all, thank you so much for all of your support through the process of figuring out what the hell is wrong with my neck/back/shoulder. It means a lot! My MRI went pretty well I think. I am actually now pretty convinced it is indeed my neck. While I was in there they stabilized my neck and it was almost like it was in a brace. I have NEVER felt as much discomfort in that shoulder or arm in my life… it was actually quite painful. HOWEVER, when I got off the table and out of the stabilizer brace thingy, my shoulder actually felt better than it has in a long time. Very little discomfort, stretched out and just better. So much so, in fact, that my training session today was amazing. 7 rounds on the heavy bag with zero problems, no fatigue and even my breathing felt better. It was crazy! I am waiting to hear back from my doctor about when I can get the results but I’m feeling pretty optimistic. There was one casualty though. I had to take out all of my ear piercings and go figure, one actually closed up IN AN HOUR AND A HALF! And I had that one for 10 years. The scar tissue in the bottom hole of my industrial just completely closed it up. It is sad because I loved that piercing but I guess if I am on the road to getting better it is worth it.

I went to Whole Foods tonight to replenish my grocery supply. I walked out with mostly produce since I’m still working on the pantry. I got some carrots, cucumber, spinach, artichoke hearts, portobello mushrooms, and cauliflower. I also got 3 of the small Vita Coco coconut waters (on sale 3 for $5, I got 2 pineapple and one peach and mango) because it is the only brand of coconut water I can actually get down. I think Zico is kind of yucky :X I have some great meals planned so sit tight :)

I have been doing a lot of thinking about life and where I am and where I want to be and realized that I have a long way to go. What I’m doing and what I want to do are two very different things but I’ve decided that life is too short and now is the time to start chasing my dreams and make things happen for myself. I have some projects planned for myself and I’ll fill you in on them once I get rolling and make a good deal of progress. Exciting things are happening because I’ve decided it is time for me to focus on becoming the person that I dream of being.

Which brings me to the real subject of this post, inspiration. I know that I’ve been bringing it up a lot, but I’m REALLY happy that I joined Pinterest. I know that it is a great way to promote my blog and all of that stuff, but I have found that I love it more for the inspiration it provides me. I love seeing things that are cool and then coming up with ways to make them my own. I decided that since I don’t have food photos for you today, I’d show you some things that are inspiring to me that I’ve found on Pinterest.

Repurposed Etched Spice Jars. This DIY project is beautiful and gives your kitchen such a unique look AND is a great way to recycle your old bottles. I’m really loving these.
How cute are these Oreo Pops!! I love things on a stick and these Oreos are so easy but look really great! These will be a great holiday treat using Candy Cane Joe Joe’s.
How hilarious is this mustache Rainbow Cake? I’ve always wanted to try making “tie dye” cakes and this one is just too cute. I need to get on that :)
I’m pretty much obsessed with these Melted Ice Cream Cupcakes. They are so adorable and I wish I had though of them! These inspire me a lot to really push my creativity :)
Finally, this presentation of a beautiful summer fruit salad is brilliant. I tried to click back to the source but couldn’t find it. I think it is so simple but really smart and pretty to look at. 
So the moral of this really long (sorry) story is that I’ve become really inspired by the things I’ve seen on Pinterest and just all around me and I’m hoping to be able to use this inspiration to create some new, fun things. I’m also hoping that this inspiration will find its way into some projects I have in my head that I’m really pushing to make a reality. It’s time for change my friends. And I’m bringing you along for the ride!
Sorry this has turned into a mammoth post! Just one more thing though. As of last night, I’ve gotten my paws on tickets to the UFC fights in Jersey on Saturday! I’m so excited because I’ve never been to live fights AND to make it even better, Nate Diaz (one of my favorite fighters) will be fighting in the main event and will be cornered by his bro (and my all time fav fighter) Nick. SO. AWESOME. Yay!

Fun Tuesday – Stuff I’m Into (The Craft Edition!)

Hey everyone! I realized that I forgot to do my fun Friday post last week. When I woke up it was pouring and gray and gloomy and I figured it was the perfect day for a post on fun crafts that I want to do! I’ve been antsy lately and feeling like I’ve been watching too much tv and not doing enough “stuff” so I’ve been pinning projects I want to do on Pinterest. I figured I’d share them with you today because my food is boring :)

So lets check it out!

I thought these were awesome! They are DIY wood picture frames! You buy plain wood plaques and paint them whatever colors you want then mount the photos in the middle! I’m thinking about making a few with pictures of Delilah for my mom and my sister in law for mother’s day.

Jar-o-lanterns! How adorable! I LOVE these I definitely will be making some for Halloween this year :)

Mason jar planters! I would also love to make these so I can grow some herbs :) Maybe I’ll look into it more when the summer comes.

How cool is this?! It is called bubble painting. All you do is put some food coloring into bubbles and blow the bubbles onto a canvas. This will be happening very soon! 
The raw materials for…

… friendship bracelets! I actually find it really relaxing to make these and while I’m not great at it (I can only make the simple ones) it’s a fun little project for a rainy day! Thanks to Sophie for reminding me about these!
I have a bunch of errands to run before I head into work this afternoon. I have to get my earrings taken out for my MRI which is annoying but it has to be done. Luckily there is a Michael’s right near the tattoo shop I’m going to so I may go peruse in there and pick up some thread. I think canvases are on sale so I may grab those if they are too :) I’m sure I’ll be overwhelmed by all of the thread choices, I have no clue what colors I want to use!

Fun Friday – Things That Rock My Socks

Hey everyone, happy Friday! Hope you all had a great week and that you are enjoying the start of your weekend. I’m very happy that it is the weekend and tomorrow is a special day: my mom’s birthday! We will be celebrating so I probably won’t have a post up tomorrow but you never know!

Anyway, keeping up the same Friday tradition I’ve had for the past few weeks, here are some things I’m into this week.

I just joined Pinterest! I literally just joined a few hours ago so I’m working on it but definitely feel free to follow me! I can’t figure out how to get the button on the side of my blog because for some reason Blogger will only add a URL and I have HTML code for it? Oh well, for now please just click HERE to follow! ;) If anyone has any pinterest advice I’d love to hear it!
Another song that will be played out in a week but I’m loving anyway is Gotye ft. Kimbra “Somebody That I Used To Know.” It’s a great song and Kimbra’s (the girl) part is pretty much the story of my life, Ha!

The minute I saw Gabby’s Raw Lemon Coconut Hemp Seed Bites I knew I had to make them… soon! I figured it was a perfect way to start my pantry challenge so after I got home from work today I made a batch for myself :) They are SOOOOO good and super easy to make. Thanks for the great recipe Gabby, I’m so glad I found your blog! 
BUBBLE TEA!! I have loved this stuff ever since I was a grad student in Seattle (5-6 years ago) and there were 3 bubble tea places within 3 blocks of my apartment. It is tea with some sort of fruit flavor and tapioca pearls. It’s so good and I hadn’t had one in so long! I found out that a new place opened close to my house and they had bubble tea so I naturally made my way over there. This one is peach tea with tapioca pearls. Sorry the picture is so ridiculous, I was practically hanging out of the car taking it. The place was very small but cute, had a lot of different flavor options and even had a few vegan food options! None were gluten free but the bubble tea was enough for me. Before this place opened up you’d have to go to Flushing or Manhattan to get it and I’m never really in either place. It was incredibly sweet so I’ll ask them to only put half the usual amount of fruit puree in there next time. Best. Discovery. Ever.
And finally, the start of my pantry challenge this weekend is rocking my socks off! I already wrote up a list of dishes I want to make and I can’t wait to start varying up my meals a bit. Hopefully the blog will perk up with some creativity this week :)
