Getting Ready!

Hey guys! I’m back from my weekend babysitting Delilah. She is so freaking cute and funny and smart but she is exhausting! I am so glad I have today off to recover! She’s a little too smart for her own good though and she tricks us a lot but we caught on ;) Can’t get outsmarted by a two year old! I didn’t get a lot of pics but I did get this one.

She was driving the ice cream truck ;) She’s so freaking cute. I can’t believe how big she is.

So now that I’m home I’m getting ready for my raw journey. Some things I’ve done so far today:

I’ve torn up two heads of kale and cleaned them in filtered water. I tore them up ahead of time because I thought it would cut some prep time during the week to make my salads for lunch. I’m going to get more for some kale chips too :)

I didn’t take a picture because it’s not interesting but I changed the filter in my Brita so I have a fresh one for clean water :) It seems silly but I’m paying attention to everything because who knows, maybe I have a sensitivity to chemicals? I try to eat all organic but sometimes it’s not available so I’m trying to be extra diligent with that. And with the water because that could make a difference too.

And now I’m going to comb through my raw “cook”books to look for recipes to try for dinners. I laid them all out and was surprised by how many raw books I’ve accumulated! Books I saw after I took the pic and forgot to include are Ani’s Raw Food Asia by Ani Phyo and Thrive by Brendan Brazier. I’m sure I’ll be able to use recipes from those as well.

I’m getting started tomorrow with a one day juice cleanse. After that my plan/goal is to have a green juice breakfast, a big salad for lunch, a snack that ideally includes healthy fats (veggies with almond butter, avocado, etc.), and dinner will be something different and more involved than just a salad. Who knows, I may stray from that meal schedule but a big goal is lots and lots of greens. I’m hoping to keep this up through February and depending on how I feel, add back very minimal amounts of cooked veggies (sweet potatoes, etc.) and grains like brown rice, gf oats and quinoa. That will happen slowly to see how my body takes it. Hopefully all of this effort will pay off.

Baklava Nut Medley!

Hey everyone! Super quick post tonight, just wanted to show you the first recipe I made from Amber’s Practically Raw! One of my favorite desserts of all time is baklava and naturally I haven’t eaten it in years. You can imagine how excited I was to see the recipe for (raw) baklava nut medley in this book!

Look how pretty!! It’s a mixture of walnuts, pistachios and almonds… all of the nuts you may find in a baklava :)

The nuts are tossed in the most amazing, sweet, cinnamon-y syrup and dehydrated.

Check out how gorgeous they are! They have the most amazing glaze and it really tastes just like baklava! The medley is sticky and sweet and absolutely perfect! It was the best possible choice for my first recipe from this book! I am so excited to try more!

On a more serious note, I don’t even have words to describe to horrific events that occured in CT today. I’m so horrified and saddened by the events and no words will ever be good enough to describe what a tragedy it was. So I’m going to leave it at that.


Such a Tease!

Hey guys! Happy Thursday! I hope you are all doing well :) Is it me or have things just be really crazy lately? I feel like time has flown by since the hurricane and I feel really scattered! Is it just the time of the year? A break in the routine? The fact that I’ve been feeling sick? Who knows but I can’t believe the year is almost over! Are you guys feeling the same or am I just crazy?

Anyway, enough of that! I just have two pictures to share with you today.

Sorry the photo is so bad but I took this in hiding at work ;) If you remember during MoFo I recreated Uncle Bacala’s Insalati di Asparagus. Well someone gifted the studio with a gift card to Uncle Bacala’s so we ordered lunch and I got my salad as usual! I t was nice because it was nowhere near as oily as the salads in the past! Oh and this was actually the leftovers from yesterday. It held up pretty well but the potatoes were all gone when I took the pic :)

When I got home from work today I decided to try a recipe from Amber’s Practically Raw! I seriously couldn’t wait and it’s dehydrating now so I’m going to show you just a little tease!

Told you it was just a tease ;) I was SO EXCITED when I saw this recipe because it is the snack version of my absolutely favorite dessert (which I haven’t eaten in years, wah!). Can’t wait to taste the finished treat! I’ll show you more tomorrow when they are done!

That’s all for today! Just have two more days of work then it’s my weekend! Another Dr. appointment on Monday with my rheumatologist. We’ll see how much of a waste of time this one turns out to be.
