CSD Cleanse: Day 13

Hey guys! I know I haven’t been around much but I’ve just been really busy with cleansing and working and whatnot. I started a regular cardio routine as well and it feels good to at least get moving again. I’m also going to do my first training session on Friday too! I’m only going back once a week for now and I’m not doing boxing yet since my shoulder is still jacked… but it’ll be really great for me emotionally so I’m really excited!

Tomorrow is my CT scan. I’ll be enjoying a breakfast of champions of 2 bottles of contrast followed by an IV drip dessert. Awesome. I see a lot of green juices and smoothies in my future to flush that crap out of me. I hope to feel ok enough to get some cardio in tomorrow evening.

My cleanse has been going well but I haven’t been eating anything crazy. Here are the meals I enjoyed today. There was also an unpictured green juice.

Morning glory waffle with too much maple syrup. It came out so quick. It was still delicious though :)

This is a pic I too earlier in the week but lunch was the same meal so I am using this one. Two zucchini cakes with a big ol’ carrot and some roasted cauliflower.

My brother, sister in law and niece are going to Texas to visit her family next week so we went over to their house for dinner tonight to see them before they go. I had a delicious dinner of roasted veggies and cucumber salad. It was really great.

Snacks in between included raw almonds and a green juice.

That’s all that’s happening now. Lots going on but I’m definitely trying to keep a positive, optimistic attitude :) I hope you are all doing well! I’m going to try my best to post a few more times next week.

Morning Glory Waffles!

Hey everyone! Hope your Monday is going well. I’ve been pretty productive today! I had my Dr. appointment early today and not too much news to report. More blood drawn… seriously starting to look like I have tracks. Crazy. She wants me to get a CT scan of basically my entire torso to rule out internal causes so that’s the next step. It’ll probably happen during the cleanse which seems silly that I’m going to be blasted with radiation and full of contrast during a cleanse but I don’t really know what else to do. Very frustrating.

On a happier note, what I’m going to show you today is the result of my pulp experiment. A little backstory to the name and flavor profile is necessary… at least in my mind ;) Before I started at the photography studio (pre-vegan days) I worked in a small local coffee shop when I was a barista and counter-wench. I also got to bake a little bit too which was fun but mostly I was slinging coffee and muffins. One of the muffins that we sold was called a morning glory muffin and it was ridiculously good! It was made with bran I think and it had apples, carrots, raisins and walnuts in it. It was really great and the flavor profile stuck with me since then. I never did anything with it… until now!

Check out these gorgeous Morning Glory Waffles! As far as I can tell they are CSD approved. The contain no processed ingredients and no processed/refined sugar. They are sweetened with a touch of maple syrup, mashed banana and of course the apple and carrot pulp. I did not add raisins but there are some chopped walnuts in there for a nice crunch.

Can you see the little speckles of green and orange pulp? The didn’t have a huge apple/carrot flavor but I love the idea of the extra nutrients hanging out in there. I used this┬árecipe as a start off point and made changes like I subbed out the applesauce for mashed banana, used coconut oil instead of canola, oat flour instead of wheat flour, cinnamon instead of allspice and the pulp/walnuts instead of blueberries. I’m not 100% happy with the recipe because they were quite dense/doughy and not light and crispy like I’d like but the flavor was great!

The batter made 3 and a half waffles so I tried the half as an afternoon snack and it was really good. Subtly sweet with crunchy walnuts and the added bonus of knowing that the pulp went to good use :)

Grocery Haul and Sunday Brunch

Hey everyone! Today’s post is going to be kind of quick since I have to head out to babysit Delilah soon but I ┬ájust wanted to show you some yummy stuff I have going on. I am not going to be able to bake like I wanted to today but I’m going to get on that tomorrow morning :)

Woke up early and hauled ass to Whole Foods. Check out the haul:

A neti pot and some neti salt. Getting kind of desperate for ANYTHING that will help, especially after I had my second straight migraine yesterday.

I forgot I had already bought Earth Balance Sticks so I bought more. No worries though, they’ll get used ;) 2 containers So Delicious Mint Chocolate Coconut Milk. Why 2? I was desperate to try it last year and couldn’t find it ANYWHERE! As we learned with the Candy Cane Joe Joe’s when I finally find something I want, I hoard. Organic almond milk and one chocolate and one vanilla greek style So Delicious yogurt.

Baby spinach, baby carrots, some rosemary, a lemon and some organic pears.

Organic Yellow Corn Meal, Oat flour, vegan chocolate chips, black sesame seeds, pistachios (they only had shelled roasted, salted pistachios of course so I had to sit and crack every single one of them for a recipe I’m not even making today, haha) and some Raw Cacao Crunch Cereal

The cacao crunch cereal a little closer. Just got a little to try because it sounded interesting! Whole Foods is seriously stepping up their game in the raw department. There were TONS of bins in the bulk section with raw, sprouted ingredients and cereals. It was so hard to choose!

After I finished putting everything away I decided to make myself a really lovely vegan brunch… mostly because I couldn’t wait to get my hands on my new waffle iron! Obviously waffles were on my mind so check out my AMAZING breakfast!

Blueberry Cornbread Waffle anyone?! I used Isa’s Cornbread Waffle recipe from Vegan Brunch and added some blueberries to it. I also made it gluten free by subbing out the regular flour for oat flour. Isn’t it perfect?!

The waffle itself wasn’t sweet at all really but the blueberries and maple syrup I drizzled on top brought out a hint of sweetness that was just perfect. It had a great texture. I’m so excited about my waffle iron, haha!
