Hi everyone! Hope that you are all doing well today. I’m gearing up for a very long week. My co-worker is out of town so I have to cover her hours this week. This means I’ll be working 11-9 today, tomorrow and Thursday. I also have the potential to be working weddings Saturday and Sunday so this has the potential of being an incredibly long week. I’m basically just going to tackle it by pacing myself, keeping myself fueled and energized and I’m going to try and get in some workouts in the mornings to get that blood pumping nice and early since 10 hours is a long time to be sitting at a desk.
I have a bit of exciting news! I had a training session last night and the workout was really great. We did a chest/back circuit, a leg circuit, and a bunch of core exercises. I felt really strong and I had a bit of a breakthrough. For the first time in as long as I could remember, I walked out of the gym with no pain or fatigue in my shoulder. It was such an amazing feeling! I would also have problems with it while washing my hair as it would get fatigued quickly when my arms were raised but that has also gotten much better! I’m definitely going to continue to take it easy and lay off the impact but it is so encouraging to know that I made some progress! I’m hoping maybe I’ll be able to hit some pads for my birthday next month at the end of September. It would be the best birthday gift ever
OK so as you guessed I had to prepare my lunch and dinner to bring to work with me. I’m not reinventing the wheel with these meals but they definitely look yummy and I’m looking forward to them! It is definitely a goal of mine to get more creative with my meals and recipes and I definitely hope to get into it a bit more when I have some time
For breakfast I made my breakfast banana split and had some yummy strawberries on the side. So good!
Lunch is the standard hummus, stuffed grape leaves, tomato and carrot plate. It’s so easy and so good, it’s a perfect meal to plan for a long day.
For dinner I made my new favorite meal: Tofu scramble with spinach and tomato (seasoned with nutritional yeast, pepper, salt and garlic) with a side of roasted cauliflower. Yum!
I suppose I should get going so I can finish getting ready for work. I hope that you all have a great day! I’m going to do my best to post this week but I may not be able to every day. I’ll try and make the ones I do get in good though
