My Orlando Vacation!

Hey everyone! I’m back from Orlando! My vacation went so fast but I had a great time! Lots of time with my best friend, great warm weather and of course, yummy vegan food! I took lots of pictures of my delicious meals and couldn’t wait to share them with you!

I arrived there Wednesday evening and my friend’s birthday was Thursday! I decided to cook him a nice birthday brunch. I had such a great time doing it and it came out amazing!

As soon as I saw Allysia’s Pumpkin Coffee Cake recipe I knew I had to make it. It sounded delicious and looked like it would come together quickly and it was such a great choice! You guys have to try this recipe, it is AMAZING!! Perfect way to welcome the fall!

This was my brunch plate with all of the final dishes :) While the cake was cooling I threw together a quick tofu scramble and had bought some fruit for the side. It was such a delicious and perfect brunch! A little sweet, a little savory and the burst of fresh fruit. So amazing.

We spent a lot of time sitting in his back patio space and almost every time we went out there there were lizards crawling around on the screen. I thought they were so cute so I took this pic! I love the way it looks with the instagram effect :)

The following day we went to The Loving Hut for lunch. We are a little dense apparently because we didn’t realize they close from 3-5 and arrived a little before 4. The woman let us in anyway and still fed us! It was like a private seating and it was so sweet of them to serve us even though they were closed. I started off my meal with a delicious bowl of wonton soup. The broth was light and lovely and the wontons were super tender and delicious.

For my meal I ordered the Combo #1 which consists of golden rice (amazing), some tofu, a really delicious simple salad and a summer roll. It was absolutely delicious.

That night we decided to stay in and have a mellow movie night so decided to load up on some goodies. We got 2 bottles of Electra Moscato and some treats from Raphsodic Bakery. The bakery is literally my vision I’ve always had for a bakery come to life so I was teetering between jealous (lol!) and so stoked that it exists and seems to be thriving. Anyway, back to the treats! In the box you’ll find a chocolate chip “sammie,” (a cookie sandwich with frosting in the middle), a chocolate espresso cupcake, a chai cookie sammie and a lavender brownie. I ate the chai cookie sammie and it was amazing! I now understand Shen’s ability to eat half at a time because I think these treats are even richer than they look so it was eating in halves :)

Yesterday (Saturday) we checked out the amazing Farmer’s Market! I didn’t get pics and didn’t buy anything since I was leaving so soon but it was so great! It was huge and had gorgeous produce. There was one vendor selling amazing fresh pineapple and you could smell it from so far away! Yum!

A friend of my friend was hanging out with us and decided to bring his kitty over for me to meet! Her name is Hannah and she is so adorable! I passed by her just hanging out at the top of the stairs and decided to take a pic of her sweet face :)

This morning we went to brunch at Ethos Vegan Kitchen. They moved to a new location since the last time I was there and I love the new space! It is big and spacious and has a great vibe and decor. It definitely seems to be thriving! I decided to have the breakfast burrito because it just sounded so delicious! It was tofu scramble with sausage and potatoes wrapped in a tortilla and smothered in sausage gravy. It was super savory and delicious and obviously really filling!

I obviously didn’t photograph everything I ate but these were definitely the highlights! I decided that I would just enjoy myself and sure I had a few rich meals but my messed up digestive system kept me in check with nausea and a few headaches. Ha! Anyway, it was an absolutely amazing time and I’m sad it went so quickly!

Tomorrow is the beginning of Vegan MoFo! I feel like it snuck up on me! I’ll be back tomorrow with an introductory post and then I’ll be ready to dive into my theme of recreating restaurant meals! I’m so excited for this project!

Hey friends! Thank you all so much for your early birthday wishes, it was definitely very sweet of you all! I feel very lucky to have “met” all of you :)

Today I officially turned 29. And for the first time in a long time I decided to spend my day exactly the way I wanted to spend it. I started off with a very early trip to the gym where I warmed up with some cardio then decided to play with the new boxing equipment that my gym has! I forgot to tell you all that on Thursday I had my first full fight training session in months and it felt great and was so much fun! In addition to the heavy bag we have, they added a return bag, a speed back and a slip bag. I had SO MUCH FUN testing everything out and doing round after round. I was tired after and now I’m sore but it’s so worth it! It reminded me how much I love it and how much I missed it. So this morning I decided I’d do a little bit of training on my own and I’m glad I did :)

After the gym I headed over to Starbucks to cash in on my free drink. You better believe I took advantage of that, ha! Here is my Venti Iced Decaf Vanilla Soy Latte. I guess it’s becoming more clear to me that I’m pretty high maintenance when it comes to food :X

So I decided to go to a Mexican restaurant for my late birthday lunch mainly because I wanted to imbibe a giant margarita. I didn’t realize it was a late lunch/early dinner (we ate at like 4?) so it turns out I was doing a little day drinking. Oops, haha! So anyway, back to the masterpiece above. That, my friends, is a Black Cherry Margarita. And that Black Cherry Margarita was DELICIOUS. I should have known better that it would be so filling and I should have ordered lunch accordingly but I wasn’t thinking clearly and ordered…

This delicious burrito! I tore through the tortilla and just ate about 3/4 of the the insides. It was called the “Healthy Burrito” and included “broccoli, cauliflower, eggplant, zucchini, portobello mushrooms and sweet peppers steamed with enchilada sauce, then overstuffed with black beans and served with a side of sour cream and guacamole.” I switched out the sweet peppers for onions and obviously skipped the sour cream. It was so good but I was SO STUFFED when I walked out of the door. And drunk. I have very low tolerance lol.

My intention was to go to Babycakes to get my birthday treat but apparently it is closed on Saturdays! What?! I recovered though and decided to pass by the Whole Earth Bakery and picked up a few treats. I picked up a slice of Pumpkin Pie (Happy First Day of Fall!), a slice of Key Lime Cheesecake, and…

Chocolate. Almond. Cheesecake. Clearly this would be the ultimate birthday dessert so when my poor belly recovered from lunch I ate about half of this bad boy. It was really rich and decadent but also really delicious!

So here I am, a little sleepy, a lot full and very happy. I had a great day and I’m so thankful to my family for making the day special :) I hope you all enjoyed your Saturday and the first day of fall! Tomorrow is back to the grind with another wedding, but I only have 4 more days of work until my trip to Florida! Yay!

Planning for Success

Hey friends! Thank you all so much for helping me count down to my glorious day of freedom last week :) Your kind words always help me get through the busy times! I enjoyed my day off by spending some time with Delilah and then relaxing and watching a bunch of TV. Probably not the most productive way to spend my time but I was able to rest my body and I was happy to be able to do that.

Today’s post has a little bit of everything I think! I have a meal from yesterday, some planning for the week and some inspiration :)

Last night’s dinner was really yummy. A home made Chipotle bowl with rice and beans, salsa, daiya and avocado. I served with with a tortilla since I’m too much of a spazz to roll a decent burrito that actually stays together. After this meal I put the rest of my Daiya in the freezer because a) I’ve been eating it too much lately and b) It seems to be lasting forever! Seriously the bag just won’t end!

Today I took a ton of time to get a lot of fruit ready for smoothies for the week. I really want to get back into the habit of drinking smoothies every day and being prepared is key. I added 4 more bags of cherries to my other two in the freezer (I’m going to make these last!) as well as some strawberries. I had the bananas already and just added them to the pile so you could see how much fruit I have ha! I also have half a bag of frozen blueberries as well as some frozen pineapple. I think I’m set on smoothies for a while!

While I was cleaning I found this old fortune and thought it was so perfect for the headspace I’m in right now. “You’ll never know what you can do until you try.” This is so true!
So I have a question. I just tried to upload another photo and it said that I’m out of space in my Picasa account or something. I didn’t even know I had a Picasa account and when I clicked to get details it said I had 5 GB of drive space that I wasn’t using. I’m confused I guess and if I don’t upgrade does that mean I can’t upload any more photos at all? Has this happened to any of you, and if so did you just pay to upgrade? Please let me know, I’m so confused!

Toasty Sunday

Hey everyone. First, I just want to thank you all so much for your kind words and support on yesterday’s post. You are all very sweet and I appreciate all of your positive thoughts.

Today was a toasty one here in NY. It was actually a perfect, beautiful day. I got to the gym as soon as it opened at 9 and got in some cardio. After that I visited my friend that just had a baby (such a beautiful baby, so teeny!) and then ran some errands, including a trip to Trader Joe’s to stock up on essentials.

My food has been strange lately so I’ll just show you what I ate today (well at least what I remembered to photograph).

Yesterday when we went to the outlets we had dinner in a Mexican restaurant. I had the other half of the wrap pictured above that was stuffed with rice, beans and veggies. It was really good and really filling, and that’s why I had the other half for lunch today. I just ate the filling and wish I would have asked for it in a bowl instead of a wrap but too late. I just ripped the wrap open and ate the filling and I wish I would have taken a photo of the carnage. At dinner I finally drank my strawberry margarita I’ve been wanting since my birthday 7 months ago. Well half of it then I was pretty well buzzed and passed the other half to my bro. What can I say, I don’t drink much ;)

For a snack I had a grape fruit leather.
And I decided to treat myself and enjoy an iced decaf soy latte with cinnamon. The weather was too good and it was the perfect way to welcome the warm sunshine. Between the coffee and the margarita I’m pretty well set on splurges and it is back to the veggies and green smoothies tomorrow.
Dinner is some moo shoo veggies so I’m getting in some good veggies and the sauce is light so I’m pretty happy with that.
Hopefully tomorrow will be back to normal. I’m noticing the bruising coming back on my body and a general feeling of fatigue so that means it’s back on the high raw food train.  I’ve got some good stuff planned.

Mexican Take Out!

Vegans can enjoy a great meal in a restaurant or quick and easy take out.  We just need to be creative and ask a lot of questions.  Here is a salad I enjoy fairly frequently from a local Mexican take out place and a burrito I tried as a treat.  Both are  amazing and totally vegan.
Grilled Veggie Salad with Spicy Vinaigrette (I also added some seitan for protein at home)
