Vegan MoFo Post 16: Chipotle Burrito Bowl

Hello my friends. I’m sorry I didn’t post yesterday. Truth be told, I’ve been SICK. Yesterday I got so sick at work I had to leave early. I’ll spare you the gross details but It hit my very quickly (a coworker told me all of the color drained from my face in the matter of one minute) and I had the worst stomach pain I’ve ever had. I’ve also had a hard time keeping food down so I’m basically at the point where I’m more concerned about eating foods that I can keep down rather than if I’m eating fruit or sugar or whatever. I just need to keep myself going until my appointment on Monday.

Since my meals have been sparse and boring I figured I’d show off a recreation that I’ve made a million times before. It is easy to make at home and it fits in with my theme quite nicely :)

Here is an actual Chipotle Burrito Bowl :) I feel like there is no way to make a burrito bowl look pretty but here it is. These things are damn good minus the tons of cilantro they put in there. If my tummy wasn’t angry I’d totally want to eat one right now.

It’s so funny because here is a dish I made before I ever even went to Chipotle! I guess it can be considered my first burrito bowl! I made it using rice and beans, spinach, broccoli, salsa and avocado. A little bit of a departure but check out all of that greenery.

This is one of my more recent recreation attempts :) I used quinoa and beans instead of rice and beans which was great! I added some salsa and avocado to it. In retrospect I wish I would have used some lettuce for crunch.

This last one is rice and beans with some salsa, Daiya, mashed avocado and a tortilla for scooping.

I guess the moral of the story here is that dishes like the Chipotle burrito bowl are super customizable! I love being able to make restaurant dishes at home because I can make it to my taste… in this case that means no cilantro! For my next one I will also try to make some home made pico de gallo and definitely use some shredded lettuce on top.

So I guess that’s it for today’s post. Sorry it’s nothing new but I don’t know how much new stuff you’ll get out of me. Today I feel a lot better but am still very cautious of what I eat and am really just trying to eat easily digestible foods that are easy on the tummy.

I hope that you are all well! For all of you lucky people with normal work schedules hooray for Friday tomorrow! I have to work Saturday in the studio as always and I have a wedding on Sunday so I still have a few days left. I’ll be living vicariously through all of you :)

Planning for Success

Hey friends! Thank you all so much for helping me count down to my glorious day of freedom last week :) Your kind words always help me get through the busy times! I enjoyed my day off by spending some time with Delilah and then relaxing and watching a bunch of TV. Probably not the most productive way to spend my time but I was able to rest my body and I was happy to be able to do that.

Today’s post has a little bit of everything I think! I have a meal from yesterday, some planning for the week and some inspiration :)

Last night’s dinner was really yummy. A home made Chipotle bowl with rice and beans, salsa, daiya and avocado. I served with with a tortilla since I’m too much of a spazz to roll a decent burrito that actually stays together. After this meal I put the rest of my Daiya in the freezer because a) I’ve been eating it too much lately and b) It seems to be lasting forever! Seriously the bag just won’t end!

Today I took a ton of time to get a lot of fruit ready for smoothies for the week. I really want to get back into the habit of drinking smoothies every day and being prepared is key. I added 4 more bags of cherries to my other two in the freezer (I’m going to make these last!) as well as some strawberries. I had the bananas already and just added them to the pile so you could see how much fruit I have ha! I also have half a bag of frozen blueberries as well as some frozen pineapple. I think I’m set on smoothies for a while!

While I was cleaning I found this old fortune and thought it was so perfect for the headspace I’m in right now. “You’ll never know what you can do until you try.” This is so true!
So I have a question. I just tried to upload another photo and it said that I’m out of space in my Picasa account or something. I didn’t even know I had a Picasa account and when I clicked to get details it said I had 5 GB of drive space that I wasn’t using. I’m confused I guess and if I don’t upgrade does that mean I can’t upload any more photos at all? Has this happened to any of you, and if so did you just pay to upgrade? Please let me know, I’m so confused!

Fabulous Friday :)

Hi everyone! We made it through another week :) As I mentioned before I have a baby shower tomorrow so I am not going to work. I have a full weekend off for the first time in a while! And to make it even better  I have a training session in the morning so it’ll be a great way to kick off the weekend.

I put the gift together for the baby shower this evening and I’m really happy with how it came out. I love putting together super cute gift baskets so that is what I decided to do. I scanned the registry and saw a baby food cookbook and thought that would be a perfect jump off point. From there I decided to get a bunch of items from the “feeding” section of the registry and put it together. I used a super cute storage container that I got from Target as the “basket” so it’ll be functional as well. Check out the completed basket!

So now let’s move on to the grub. Some good stuff today!
First, I couldn’t in good conscience eat this lovely burrito bowl from Chipotle without showing you! This was my dinner from last night. Incredibly filling and delicious!
Breakfast was a new green smoothie combo. I’m calling it my Berries ‘n Cream Smoothie. Check it.
Berries ‘n Cream Smoothie
1/3 cup frozen blueberries
3/4 cup frozen strawberries
1 1/4 cups almond milk (or preferred plant milk)
1 serving Vega Vanilla Almondilla Shake n Go Smoothie powder
2-3 cups packed spinach
Blend and enjoy!

Late morning snack was a delicious organic honeycrisp apple. Left the label on for good measure :)
Lunch was a standard chopped salad.
Dinner is an amazing quesadilla. The same as the other day minus the tomato on top. Lots of spinach :)
So it is fairly common that I’m covered in bruises from training. I’m used to it but sometimes I’ll get one that even impresses me ha! I got a pretty good one on Monday.
That’s from an elbow. It’s a beauty huh? ;)
I hope that you all ended off your week/started your weekend on a good note! I’m in pretty high spirits and I’m hoping that I’ll have a good balance of being active and working out and just relaxing and taking a few moments to myself. I hope that you all enjoy your weekend! I’m definitely going to be starting off well by watching the 2 1/2 hour season premiere of The Ultimate Fighter. This season is cool because all of the fights are live AND because the two coaches legitimately hate each other. That’ll be entertaining :)

A Day Late…

…but totally worth the wait! At least I think so :X Sorry I didn’t get to post last night, I was so tired when I got home from work I figured I’d just wait until this morning so I can actually think clearly as I post.

I had another good day yesterday so I guess I’ll start from the beginning. I woke up early and had 2 clementines right away to to get some sugar in my system to sustain me through my workout. I finally put together a sick workout utilizing the heavy bag in my free time. Here is what I did:

15 minute jog @5.0 mph (12:00 mile)
15 minutes on arc trainer (if you don’t know what that is, the best way I can describe it is if the stairmaster and elliptical had a lovechild).

On the heavy bag:
1-3 minute round boxing
1-3 minute round elbows and knees
1-3 minute round kicks
2-3 minute rounds freestyle (punches, knees, kicks, elbows)

(3x) 30 seconds straight punches followed by 1 minute ground and pound.

Awesome workout! I felt great after! I also have a product review for you. I picked up some Vega Sport Electrolyte Hydrator at Whole Foods on a whim the other day.

You can get more info here and it’s also where I grabbed the pic. It is a small tube of powder that you add to your water and it is supposed to rehydrate you and replace your electrolytes during a workout (like Gatorade would) minus the calories and yucky stuff. I grabbed one of each flavor and tried the lemon-lime one yesterday. It was actually really good! It works like Gatorade but tastes more like vitamin water. It has a very mellow taste but is still good. Whether or not it really works who knows I’ll probably use a couple times a week. I think it was only 99 cents per tube too so it’s way cheaper than vitamin water, gatorade or coconut water.
And now onto the food!
When I got home from the gym I made myself a protein shake to drink while making this delicious breakfast. I had some oats with a banana and a tbsp of chopped walnuts. Lots of cinnamon, naturally.

I decided to get some Chipotle for lunch. Such a great decision, my burrito bowl was delicious! Filled with the usual suspects, brown rice, black beans, pico de gallo, guacamole and lettuce. YUM!
In the afternoon I had an unpictured coffee and some almonds.

For dinner I had some delicious Mediterranean Hummus from Trader Joe’s with 3 stuffed grape leaves (there is one hidden under the carrots) and a big ol’ pile of carrots.
Such a delicious day started off by a sick workout. Feeling good these days. Been making sure to drink a ton of water too which is so important. I love having a little more spare time in the winter to be able to actually plan my meals and workouts :)

Still Eating Clean – Grains In, Added Sweetener Still Out!

Hey everyone. Quick car update, I’m lucky to have an amazing mother that let me borrow her car (I drove her to work this morning and my dad is picking her up) so I’d have a car to get to work and the gym since mine is still dead. I also finally had a chance to get to Whole Foods after the gym which was SO necessary because I really needed to stock up!

I’ve been loving my iPhone since I got it, especially all the great apps that make life easier. I tend to have random thoughts come to me so I downloaded a great Grocery List app so I can add things anytime I think of them. I’ve also been using a great app called Lose It! and I love it. It allows you to figure out how many calories you are eating a day and also how many you burn through exercise.  It’s nice to be aware of this and it also helps you figure out how many calories you should be eating to reach a specific goal.  It’s got a huge database of foods and even has restaurants in there so you can easily calculate how many calories are in your meal from popular chains.

My detox is still going well with the grains added back and the sweeteners and processed foods still out. I had some really great meals today!

Breakfast was another bowl of amazing oats. I added raisins and walnuts (and cinnamon) to this bowl. So delicious and warming. It was SO COLD today!

Midmorning snack was an apple.

I still didn’t have groceries for lunch so I grabbed a burrito bowl from Chipotle on the way home from work. I had my usual combo of brown rice, black beans, pico de gallo, guacamole, and lettuce. So good.

And I discovered thanks to my Lose It! app that this meal only has 425 calories. Not bad for takeout, and is pretty darn nutritious.  The only thing is that I bet it has a lot of salt but I’m not really sensitive to salt and I don’t add salt to my own cooked meals so I’m not concerned :)

I had a small handful of about 15 almonds for a little energy before the gym. My trainer had to cancel again so I still went in for cardio. Kind of a bummer but nothing I can do.
For dinner I had some sesame tofu with roasted butternut squash and roasted brussels sprouts Very delicious!

Vegan MoFo Day 30: Baked Oatmeal and Chipotle!

Good afternoon dears. In total contrast to yesterday’s apocalyptic looking weather, today was bright and sunny and absolutely gorgeous. I went out a did a little shopping with my mom. We ran to Michael’s because we are craft nerds ;) and to the book store. I drooled over Vegan Table but decided to show some restraint and hold off for now. 
After we got home I decided to go to the urgent care center that is about 10 minutes from my house. They have on site xrays and I figured that I can at least do a set of xrays to rule out the possibility of injury before I get the Dr. situation in order. Let me tell you he was SO nice and SO patient. He had them do xrays on my neck and shoulder. My bones are perfect, no structure issues at all. He believes (along with everyone else) that the problem is a pinched nerve in my neck. He said my neck is in spasm which is what is causing the flare up and discomfort in my shoulder. There isn’t much you can do for a pinched nerve I just need to rest when it flares up so it’ll heal quicker. So I’m taking the week off from all exercise (he said even yoga can hold up healing) and I should be ok. As long as I’m not taking hits my fight training should be ok (!!!!!) and I need to avoid running and jumping because those activities will put pressure on the neck I guess. It was so nice that he actually listened and helped and I feel so much better about everything. So now I can search for a doctor without settling or rushing.
So now it is time for some amazing eats!!
For breakfast today I decided to make myself baked oatmeal. I didn’t go as decadent this time and decided to use raisins instead of chocolate. I made a few tweaks to the recipe as well. This is what I did.
Raisin and Walnut Baked Oatmeal

Ingredients:
1/3 cup oats
1/2 tsp cinnamon
1 packet Stevia
1 tbsp raisins
1 tbsp choppd walnuts
1/2 banana (mashed)
1/4 cup plant milk (I used Unsweetened Vanilla Almond Breeze)
splash vanilla extract
Directions:
1. Preheat oven to 380 degrees. Spray ramekin or baking dish with cooking spray.
2. Combine all dry ingredients in one bowl.
3. Separately combine wet ingredients.
4. Add wet ingredients to dry ingredients and thoroughly combine.
5. Put mixture into ramekin and bake for 22-25 mins.
6. After 20 minutes put oven on BROIL and cook for another 3-4 minutes until you get a crispy crust on top.
7. Enjoy!

Mine fell apart a little. Oops!
For lunch I had a super yummy burrito bowl from Chipotle.
No clue what is for dinner but I doubt it’ll be exciting. Make sure you check back for the final round of the Holiday Baking Bracket sometime next week!

Vegan MoFo Day 17: Thing(s) People Say to Vegans

So I am going to apologize for the less than inspired post today but I figured I’d take my lack of interesting food as a break to tell a story from work yesterday.
The day was great until I encountered an obnoxious comment at the hall. I had my amazing baked oatmeal for breakfast but like an idiot forgot to pack any food to bring with me. This is the first time that happened and it was the worst time for it to happen. During the day I felt like I was getting sick again and run down and really needed food to give me energy to get through my long day. We had to shoot through cocktail hour but I managed to grab some pineapple and a small bunch of grapes.
They took our dinner orders which was actually nice because a lot of places don’t give you an option and serve you chicken. Luckily I know which places do this and bring dinner with me and tell them not to bother. I asked what the vegetarian meal was and they told me it was eggplant rollatini. I told them I can’t eat eggs or dairy either and if it was possible to get a plate of grilled vegetables. He said they have grilled veggies in the cocktail hour and I should grab some now and I held up my camera and was like I can’t I’m working…so it remained unresolved (I don’t know why they couldn’t throw grilled veggies on a plate but I didn’t want to cause problems so I let it go). Now the thing that annoyed me wasn’t that they couldn’t accommodate a vegan, it was a comment that followed.
One of the other photographers was giving his order to someone else and mentioned something about my being vegan. The person he was ordering from apparently said something along the lines of “I’ll go outside and rip up a plant for her.” I am sure they found it funny but I didn’t find it funny. And to be honest, these people really should think about what they say because I’m a single women with a lot of single friends…aka potential clients for them. You can be sure I wouldn’t send them there as my first choice. It left a bad taste in my mouth…or no taste really…I ended up with no meal (even though the clients paid for it) but it just sucked because my energy was just zapped by the end of the night.
Anyway, I can’t post without showing you ANY meals so today I tried to eat a bit heartier to make up for the very little I consumed yesterday. I had to eat breakfast super fast because I was running late but it was just some oats. For lunch I got myself some Chipotle ;)
Let’s be honest, some meals just are not “pretty.” This is one of those meals. Rice and beans and pico de gallo, guacamole and lettuce. So instead of trying to make it pretty I mixed it all up into the delicious mess it is supposed to be. And I enjoyed every bite of it with that bamboo fork :)

*Edited to add – I just remembered this…we did an all vegan wedding at this same hall in August. I’m going to reiterate that my problem is not that they could not accommodate me. I get that their job is to accommodate the clients. My problem was the comment. I know it wasn’t mean to be mean spirited but it just gets old to hear that.

Vega MoFo Day 9: Shortcuts and Chipotle!

Hey everyone! I’m sorry, I feel like today’s post is going to be a bit lame but today is just that kind of day.  I just wanted to share a few things I found that will be great shortcuts for preparing meals! 
I think we pretty much all know now that I prefer to prepare my meals from scratch all the time, but unfortunately sometimes my schedule doesn’t allow it. I found 2 great shortcuts though that I’m excited to share with you! They’ll allow me to still have delicious, healthy meals in a pinch when I’m in a rush.
The first shortcut I found is this Garden Lites frozen veggie in sauce blend. It has zucchini, portabello mushrooms and eggplant in a tomato sauce. I thought this would be PERFECT to throw on some brown rice pasta when I’m in a rush but need a nice hearty meal with tons of veggies. I am excited to try this, I hope it will be good!
Yes, you are seeing correctly, these are pouches of baby food.  My niece had one last week and I just decided to randomly look at the ingredients and was happy to only see organic fruit and veggies on the ingredient list. I especially like that there are a few flavors that have fruit AND green veggies. Dontcha think that’ll make fast green smoothies?! I rarely have frozen fruit in my house other than bananas and now it is getting past berry season so I thought that by blending a pouch of this puree with a frozen banana and some almond milk you’ll have a quick smoothie! I think it’ll also help me ease into green smoothies because I can NEVER get my proportions right. The ones above are spinach, peas and pears, broccoli, peas and pears, and an all fruit one of apple and cherry. I’ll let you know when I try a smoothie :)

I FINALLY tried a Chipotle burrito bowl! I figured I’d show it to you untouched then after I dug in so you can see what I got in it. I chose the brown rice, black beans, fresh tomato salsa, guacamole and lettuce. It was actually much better than I thought it would be! My main concern was the cilantro…I’m one of those people that thinks cilantro tastes like soap and it looked like there was a LOT in there. I only got a strong cilantro taste in the few of the bites, it was mostly covered up. I still liked my burrito bowl from the other place I went to better because it had all those veggies, but this is definitely good in a pinch! I also liked that they offered brown rice.
Sorry for the random post! I’ll be back with my interesting things (I hope) tomorrow! I’m planning on doing a post on body image next week I think. I’ve been toying with it for a while now and I decided that if I say it now I can’t back out. It is a very personal thing but I think it is important.
