Long Time No See

Surprise! Bet you weren’t expecting to see me pop up in your feed.  I don’t even know how long it has been since I’ve blogged. To be honest, I’ve enjoyed my break a lot. It has been really nice to have one less thing to stress out about. I’ve been doing a lot of thinking and soul searching during this time and I’ve made a few decisions and realizations.

I think the main thing that I realized is that food should not cause me stress. After taking a step back I realized that having a food blog has really altered my relationship with food, and not necessarily in a healthy way. I am always concerned about what I’m eating and posting and it actually causes me anxiety. What started as a hobby had begun to take up too much space in my mind. While I do enjoy cooking, it has become less enjoyable when I feel pressure (coming only from my own mind) to make up a new recipe or take a nice picture. I’ve decided that I need to take a step back from food blogging in order to regain that healthy relationship with food and to take the stress out of it.

On the plus side, I’ve decided not to step away from blogging completely. As many of you may know, I am a giant nerd. In my time away from my blog I’ve been exploring some of my nerdy interests and thought it would be fun to talk about some of it. I won’t be posting too often, maybe just once or twice a week. I’ve decided to step away from the food blog and the identity that I’ve created to go along with it (I will no longer be commenting as “xvavaveganx”) and just be me.

I understand that a lot of my readers came here to see vegan food and grab some vegan recipes so I totally understand if you do not hop over to my new space. I would love to see each and every one of you there though ;) My new blog is called “Long Island Nerd” and the site is nerdyonlongisland.blogspot.com. I really hope to see you there!

Taking A Break

Hey guys! This is going to be short and sweet. I’ve decided that I’m going to take a break from blogging for a while. I’ve been feeling very sick lately, very anxious and kind of depressed. I don’t get the same excitement and happiness from blogging anymore so rather than sitting here and trying to force myself to think of new posts I’m just going to take a little break.

I’ll still be around commenting on your posts. I don’t know how long I’ll be away or honestly even if I will come back. If any of you need to get in touch with me you know where to find me :) I may not be posting here but you surely won’t be getting rid of me, ha!

Care Package!

Hey guys! Happy Wednesday! Not quite hump day for me yet but hopefully you are all having a great day. I wasn’t around last night because I had a massive headache that spilled into today so I was just relaxing but I’m here today to show you some sweet things that I’ve received over the past few days!!

First, I received a sweet, thoughtful California themed care package from the lovely Laura and California Dream Vegan! We’ve become great friends and she has actually introduced me to Ayurveda which is incredibly interesting and has completely blown my mind (more on this in a later post).

Check out the thoughtful treats she sent!

Starting at the bottom is a Spirulina Bar, some dried apricots (a total fav of mine right now!!) in a cutely decorated bag, Spicy Chipotle Pistachios and Pumpkin Seeds, Orange and Cranberry Quinoa Cereal that you heat and eat, and Ginger cookies!!

Some cute non-edibles! An adorable little bowl, a button and some stickers from Hella Vegan Eats and a cute postcard!

Isn’t she sweet?! Thank you so much Laura, I love it!! :) The care package was very thoughtful too since she had my dominating doshas (more Ayurveda speak, I promise I’ll explain!) in mind as she picked my treats. Very thoughtful and it definitely brightened my day when I received it.

I received another little gift fairly recently.

Cardamom! I mentioned it to a friend that I wanted it and he picked it up for me when he went to a halal grocery store (I think that’s what he said?). I’ve been wanting to grab some for a long time but refused to pay $7 for it but this was apparently way less expensive although he wouldn’t take money for it.

I feel very spoiled! Thanks again to Laura and my other friend for the treats! Can’t wait to try everything and I’m definitely going to be making a chai spice blend and I’m going to put it in EVERYTHING since I’m obsessed with chai ;)

Hey everyone! Sooooooooo I’m just going to get right to it and I’m not going to sugar coat it… this diet kind of sucks. Well, it may actually deliver the health benefits but getting there is brutal. I’m not going to lie to you, this may be over before it begins. Well, not true. I’m debating making this “The Summer of Low Fat (Mostly) Raw.” I have to think about it tonight but I’ll share what I’ve consumed so far today…

Breakfast was a large container of cantaloupe. So far so good.

For lunch I made a huge Banana Date Shake with 4 Bananas, Dates and a little coconut water. This thing is close to 700 calories. It is also sickeningly sweet. When eating mostly sweet meals for a day…. the last thing I need is for one to be obscenely sweet.

Pre dinner snack was a couple of large Pink Lady Apples…

Everything all packed and ready to go. Two BPA free bottles of filtered water to sip on as well.

So that’s where I am now… the sweet meals have made me nauseous and I have no room for the giant salad I’m going to make. I’m only two days in and I just don’t like it. After actually doing it I just don’t think it’s realistic for me to maintain… I feel like I spend all day at work eating, the sweet is too much and making me feel gross… I think I need to tweak my raw summer plans and include more veggies throughout the day and a probably a few clean, cooked foods. I’ll have to figure it out. You know I would normally try to stick it out a little longer if I feel like I’ll be miserable and I’d be better off tweaking it a bit to make it more manageable. I think I’d see more success doing that than trying to stick something out that I just don’t see working or being maintainable. Oh and it will be impossible for me to store a week’s worth of groceries in my house so I’d be running to the grocery store every ten minutes… also not ideal!

Oy, I guess we’ll see. Sorry to give up before it began but I just have this feeling that this isn’t the path for me. I’ll be back with a better plan, one that I will be able to keep up :)

Tasty Thursday

Hey everyone! Happy Thursday. Apparently we are expecting the remnants of a tropical storm tomorrow? That’s the word on the street anyway. You know the weather nerd in me is kind of geeking out over it. I hope everyone in its path stays safe, please make sure to be careful and take any warnings seriously.

Anyway, on to what we’re really here for: yummy vegan food! I’ve been doing pretty well with keeping up with blogging! I was able to capture today’s eats as well and I was pretty glad I made the effort because there are some good ones ;)

I started my day with my GoodBelly juice. I guess from now on you can just assume I’m drinking that unless I say I didn’t lol. No need to repeat it every day!

For breakfast I was craving an old school comfort meal and decided to go for Ezekiel toast with peanut butter, banana and cinnamon. It was so good and exactly what I wanted.

For lunch I finished off my Shredded Brussels Sprout Salad. I added a yummy Pink Lady Apple. It was so good and really filling too.

After work I went to the gym to do cardio. It was my third trip there in four days :) Despite the menacing sky I made my way over and enjoyed a solid cardio workout. I’ve noticed that since I’ve made these few changes I’ve been feeling a lot better. I get tired when I’m supposed to, sleep well, have more energy during the day, I’m motivated to work out and I’m enjoying my colorful meals. I’ve ditched gluten, upped the raw, ditched corn (I have a suspicion that I may be allergic or have an intolerance), increased my water and hydrating food consumption and I’ve added probiotics to my diet. So far I feel great and the prep in the beginning of the week has made all the difference in choosing healthy options!

For dinner I had the same thing that I had yesterday because it was so damn good. I made a small 1/3 cup bed of brown rice and topped it with the rest of my delicious sauteed chard and a healthy dose of Cheesy Cauliflower Mash. Since I showed you the pretty layered dish in yesterday’s post I figured I’d show you the delicious hot mess it turns into after it’s all mixed together in it’s tasty glory. I could eat this every day. And I would if my greens didn’t cook down to a miniscule amount, wah! I’m definitely picking up multiple bunches of chard the next time I go shopping so I can make a huge batch of the amazing Sauteed Greens.

That’s all I’ve had so far. I feel like I may have dessert later. I don’t know what though, probably some grapes. I am craving chocolate but I don’t have any good dark chocolate so I’ll indulge my sweet craving with grapes. I’ll probably throw some in the freezer too. Frozen grapes are SOOOOOO good!

It’s called “Living Earth” and I got it as a free download from Starbucks. The design is beautiful and you can view it tons of different ways. I love satellite images of clouds so that’s the setting I keep it on. I took this screen shot deliberately because you can see Tropical Storm Andrea by the cluster of blue dots down by Florida. Isn’t it cool?!

My favorite feature is the Active Storm alert. I am fascinated by all weather but there is a special interest in tropical weather. You may recall I’m the nerd with the satellite image of a hurricane as my phone wallpaper.

 You may remember this blast from the recent past ;) It’s crazy how something so scary and destructive and devastating can be so beautiful to look at.

Checking In

Hey guys, thanks for all of your well wishes! I’m surprisingly feeling a lot better than I thought I would given how much nonsense was happening in my chest and above. The final tally is allergies, sinus infection, bronchitis and ear infection. Luckily I hopped on it quickly so the bronchitis and ear infection never got too bad (last time I had bronchitis I had no voice for days!) and after a few days of rest I’m feeling sort of human again. Not looking forward to a ten hour workday tomorrow or Wednesday but at least I’ll have Tyler to cuddle with Weds night through Sunday! I’m pet-sitting again and I can’t wait :)

Anyway, just wanted to pop in and say hi. No pics today but I should be back tomorrow to show you some pretty meals. I also wanted to pop in because I was excited to share that while I was laid up the past couple of days I brainstormed some beautiful light, fresh summer meals that I’m going to create and share over the course of the next few weeks. I’m so excited because summer produce is MY FAVORITE and I can’t wait to create beautiful meals, desserts and drinks with them.

Have any of you ever seen the movie “The Endless Summer?” It’s about two surfers that travel the world chasing the summer and the world’s best waves (random fact: I was a HUGE fan of surfing in college and have wanted to learn ever since. As a result I have a decent collection of surf books and movies ;) ). Could you imagine doing that but chasing the summer around the world to find beautiful local produce that’s entirely new to you and creating fun new recipes with them? Ahhhh, if I were rich and had time I’d SOOOOO be on that! Is that a normal thought or should I blame the copious amounts of meds I’m on for that thought? ;)

Anyway, just thought I’d pop in and say hello and thank you all for your concern. When I’m back to 100% I’ll be getting my butt back in that kitchen and making these ideas come to reality for you!


Oh and PS. any of my fellow allergy sufferers… do any of you take over the counter allergy relief or even better have any natural remedies? I’ve heard that pineapple is supposed to be great but everything else seems to be expensive or hard to find. Any thoughts? So far I’ve heard that Claritin and Zyrtec are the best over the counter options. Thanks!

A Quickie!

Hey everyone! Just popping in for a quick post. I did want to let you know I may be absent a little bit between now and next Thursday. My co-worker is going out of town and I’ll be covering her hours so I’ll be working til 9 tomorrow as usual and then Thursday, next Tuesday and next Wednesday I’ll be working 11-9. I’ll also be working my usual 8 hours on Friday and Saturday so I’m sure I’ll be tired but I’ll do my best to pop in to update you :) I didn’t even realize that her vacation was this week until I looked at the calendar today and it made me so happy I prepped meals ahead!

Anyway, here’s some of what I’ve been eating. This isn’t everything I ate today, just what I photographed :)

Started off the day with some super hydrating and delicious watermelon. Mmmm.

Snacked on some cherries and a banana. I pitted the cherries so I wouldn’t be the gross girl in the corner spitting pits all over the place, lol!

Some delicious un-fried rice. I’m SOOOOO glad I made this.

I also powered down a salad and one of my strawberry mango ice pops! I forgot I had them so it was a sweet unexpected treat ;)

Honestly, I’m probably going to be eating a lot of the same over the next few days: fruit, un-fried rice and salads. And I’m totally good with that! I will definitely try to pop in at some point over the next few days.

I got my blood test results and it was exactly what I expected. My inflammation marker is still high and my Vitamin D level plummeted back down to a whopping 16 (30 is considered the low end of normal). She’s putting me on a SUPER high dose of Vitamin D once a week for a month so hopefully that will help.

Oooh and I have two questions for you guys! First, I would LOVE some suggestions of what themes you’d like to see my tackle for my Fun Friday posts! I could always use some ideas for those posts ;) Second, I’m having a buyer’s dilemma ha! Recently I’ve been debating getting a new pair of frames for my distance glasses. I’ve had the same frames since I first got them about three or four years ago. I’m just so ready for a change but I’m also really trying to save money. I found a pair that I love that aren’t insanely expensive but they are definitely a splurge. What do you guys think, should I go for the splurge or rock these for a little bit longer?

Vacation Time!

Hey everyone! Just wanted to pop in and let you all know I’m leaving for Florida tomorrow night after work! I am SO FREAKING EXCITED! I will definitely make sure to photograph as much as I can :)

Before I go I just wanted to share some exciting news! I had a training session last night and my trainer informed me that he FINALLY found someone that would make a good sparring partner for me!! As long as I get some head gear he’s going to try and set up a sparring session within the next month or two! I’m really excited! I’ve been doing boxing and kickboxing training for about six years and I am finally going to cross off spar with a partner on my Fitness Bucket List. We’ll see how this all unfolds in the next month or two. I need to really increase my cardio and conditioning if it’s going to happen.
